Looking back 9 years. We distilled the first batch of sugar beet spirit on the 50-gallon still just days before opening, so we could have some booze for a Grand Opening Party.

HK was off rafting the Grand Canyon for his honeymoon. The big fermentation tanks and stills were not connected yet, so we fermented this in a 50-gallon drum... JY would get married just a few months later. YOLO.

They say fake it until you make it. Sometimes it still feels that way, but we did make it 9 years!
