Happy Birthday, Shiloh!

If you’ve been to The Local Bull, you’ve probably seen Shiloh quietly doing what he does best. He’s one of the easiest people to be around, puts his head down and grinds, genuinely wants to do a good job and is always willing to lend a hand. And just when you think he’s the quiet one, he’ll sneak up on you with a conversation that somehow turns into a great chat.

This week he’s trading the Texas heat and the kitchen for a birthday getaway in Hawaii and we hope he’s having the best time soaking up the sun.

We get it. We’re a little hard to explain. People ask us all the time, “So, what exactly is The Local Bull?”

Here’s the quick version:

We’re a premium meat market with Wagyu beef plus pork, chicken, lamb, fish and other local proteins.

We’re a specialty market stocked with artisan cheeses, local groceries, kitchen staples, gifts, and Texas-made favorites.

We’re a taproom pouring local craft beer and wine in a laid-back Hill Country setting.

And we’re a ranch kitchen where Wagyu steals the show.

Our current menu includes Wagyu tenderloin and chicken tacos, Wagyu smash burgers, Wagyu steak frites and Wagyu short rib queso. We keep things fresh with weekly specials, so follow along to see what’s cooking.

Whether you’re stocking the freezer, grabbing dinner, meeting friends for a drink or hunting for the perfect gift, we’d love to see you.

We carefully render the nutrient-rich suet fat from our ranch-raised Wagyu to create our all-natural cooking tallow and our popular whipped tallow balm. We even fry our fries in our own tallow for incredible flavor and a perfectly crispy finish.
