Constructed in the 17th century, the palace has a historical legacy of over 2000 years. It is a landmark in the Maltese cultural heritage for not only does it boast features ranging from the Roman civilisation up to WW2 but was also the site for the handing of the keys to the city of Mdina in the times of the Knights of St. It is also a place of religious devotion since the palazzo once served as the residence of the recently beatified Adeodata Pisani. The company's goal is that of a multi-faceted success. Our first responsibility is to ensure that this palazzo is continually well maintained and preserved for future generations, this may be achieved by the financial well-being of the commercial entities to be set up within the palazzo. These would comprise of a restaurant, coffee shop and wine-bar complemented by a variety of tourist-oriented retail outlets. We aim to achieve this goal by exploiting the palazzo’s unique historical features and its strategic location while ensuring a high quality in the products and services that we will offer that go beyond our basic financial goals. This should enable us to endorse Palazzo Castelletti’s legacy as an unforgettable cultural and dining experience.

A vacancy has arisen for a Sous Chef to join our existing team of talented chefs. The Sous Chef reports to the Head Chef and must therefore, as necessary, be able to:
manage the kitchen team;
monitor inventory, and ensuring quality control;
assist in developing new recipes and menus;
and train new staff members.

- Working 5 days a week on a 40 hour basis.
- An attractive salary package will be offered to the right candidate based on experience and qualifications
- Possibility for further career growth for the motivated individuals
