Dear everyone,

This tartare is everything I’ve been dreaming about, and everything I’ve been very strictly forbidden from eating for the past 8.5 months.

Hand-cut beef tenderloin, with freshly shucked oysters and raw shiso leaf. Cold, briny, rich, sharp, perfect. A cruel thing to have to stare at daily while enormously pregnant.

So until I can have it myself, please go eat it for me.

I had this thought the other day. This huge, all-consuming thought which probably sounds obvious on the surface, but made me feel everything, all at once. This little baby is going to come into the world and suddenly, I’ll be more vulnerable than I’ve ever been in my life. My entire world will hinge on the wellbeing of this new child. What an absolutely insane thing to really consider. That this being who's in my belly now will mean more to me than anything in the universe in just a matter of weeks. Until he’s born, it all still feels so theoretical.

I think that’s why I keep coming back to Brut.
Brut has been my only real responsibility for what feels like my whole adult life. I’ve needed to show up for it, to root for it, to take care of it when the outside world was threatening it (Covid). Within its walls, I’ve nurtured some coworkers and fallen short with others. I’ve been the best version of myself and certainly the worst. But I’ve loved it with all my might through all of it, and I was never not doing the best I could.
In a lot of ways, Brut has taught me that loving something, sticking with it, and choosing it day after day makes it so much more than a job. It becomes part of you.

Anyway… I guess what I’m trying to say is Happy Mother’s Day to all the women in the world... From the mothers of children, to the small business owners, to the wives and friends, the parents in waiting and the parents who ache to be. Your love and your strength make the world a little softer for the rest of us 💗

This one came back to us after years.

Joe spotted Les Sardines on his Instagram feed, a Mâcon Chardonnay from Robert Denogent, label painted by Denis Pesnot, whose artwork has been woven through the early French natural wine scene for decades. He hadn't seen it in years. He ordered it immediately.

Green apple, pear, brioche, salted butter. A moreish saline energy that makes you want another glass before you've finished the first.

It’ll appear from time to time on our boards by the glass and for now is a staple on our bottle list. Like most of our wines, there’s a limited time to get them in, so come in quickly, this one’s a summer-time wine if ever there was one.

Our team really loves a Cinsault. Have for years. So much so that when we were first building , our sister wine bar, Cami had an email account that signed off "Sippin on Cinsault."

Tonight we're chilling one down for you, but also for us 😎

It's from the Itata Valley in Chile, old vines, organically farmed, made by Ungrafted. In the glass it's raspberry coulis and strawberries and absolutely zero guilt about ordering a second. We've been serving it with a slight chill and honestly it's become a bit of a moment.

It's been a little minute, but tonight you too can come sip on some Cinsault.

Pistachios are having a full-on moment right now and we’re not mad about it. As matter of fact, we’re leaning right on in.

Trofie pasta, pistachio butter, a few extras on top.
It’s morish, it’s got depth, it’s got zing and…You’d never believe it but it’s fully vegan to boot. So, it’s basically a health food. Just saying.
