We don’t do bottomless brunch. It’s not really our style.

That being said, our Afternoon Tea sessions are now running every Saturday from 4–6pm, with a limited selection of classic cocktails included.

Call it a cocktail obsession, but we take incredible pride in what we do.

No cheaper versions. No reduced specs. No compromise on ingredients or presentation. Our 2026 Pornstar Martini is the same one you’d receive at the bar, complete with our signature ch*****ne foam.

Saturday afternoons, at your own pace.

Having worked across some of Manchester’s best venues, Yadney has built a reputation as one of the city’s finest bartenders, with the accolades to match Emerging Bartender of the Year 2024 at the CLASS. Awards and Manchester’s Bartender of the Year 2024.

We are thrilled to have him join us for the night.

STAFFORDSHIRE DRINKS COLLECTIVE PART 2 🎙️

Before the evening guest shift last week, we hosted for an afternoon conversation around his journey, hospitality and the story behind the upcoming

It was great to feel the genuine interest in the room questions being asked, conversations flowing and people really engaging with Lele’s story and experiences.

That’s exactly what the Staffordshire Drinks Collective was created for: bringing people together, sharing knowledge and creating opportunities for our local hospitality community to connect and learn from each other.

A huge thank you to Lele for being so open with his time and knowledge, and to everyone who joined us for the afternoon.

CULTURE SERVED VOL. 1

For our first edition of Culture Served, we had the pleasure of welcoming Lele Mensah to Stoke-on-Trent.

We kicked things off with a Staffordshire drinks collective masterclass afternoon, hearing the story behind the opening of , Lele’s journey, 25 competition win,his drinks ethos and the culture and experiences that continue to shape what he does.

Then it was time to get behind the bar…

And it’s safe to say, it was a busy one.

Over 100 serves, every one of Lele’s cocktails sold out. and he even found time to jump into a few of our Desire signatures along the way.(thanks for the espresso martinis Lele😅)

A huge thank you to everyone who came down and showed love throughout the day, and to Lele for sharing his story, knowledge, creativity and energy with us.

And finally, a massive thank you to the legends at Diageo for supporting us and helping bring Culture Served Vol. 1 to life.

All good things come to an end..

At the end of this month, we’ll be saying see you later to Poppy as she moves on from her full-time role at Desire.

If you’ve visited us over the years, you’ll know just how instrumental Poppy has been to everything we’ve built. A true Day One, she’s been there through the highs, the challenges, and everything in between, helping shape Desire into what it is today.

Poppy is leaving the hospitality industry to focus on her own venture, and we couldn’t be prouder of her. We wish her every success in this exciting new chapter.

The good news? It’s not goodbye. Poppy will still be part of the Desire family in a casual capacity, so you’ll definitely see her behind the bar from time to time.

Her final full-time shift will be Saturday 25th, so if you’ve shared a cocktail, a laugh, or a memory with Poppy over the years, we’d love for you to pop in, raise a glass, and wish her well.

And before anyone asks…yes we have an alarming collection of outtakes and questionable photos that we’re absolutley dying to post. Unfortunately we still want her to turn up for work over the next week 😂

Introducing our new Guest Shift Series:
Culture Is Served.

And what better way to begin than with one of the UK’s most exciting bartenders.

We kick things off with Lele Mensah Emanuele (Lele) Mensah , bringing world-class experience to Desire Bar.

Having worked in some of the most respected venues in the industry, including The Connaught Bar and Lyaness, and recently being crowned World Class GB Champion 2025, Lele has built a reputation for creativity, innovation and exceptional hospitality.

With the opening of his own new bar, ASASE , just weeks away, we’re excited to welcome Lele to Staffordshire for a day celebrating drinks, creativity and the people behind the industry.

Starting with our Staffordshire Drinks Collective Panel Talk, Lele will share his journey, experiences and insight into the world of modern bartending.

Then later that evening, Lele takes over the Desire bar, serving a selection of drinks that showcase his unique style and give guests a taste of the creativity that has taken him to the top of the industry.
