Phani started at Bundo Liverpool in 2021, and brings sunshine to every room he walks into. Calm as a cucumber, he has Liverpool running through his veins now. He loves his rice - eating an estimated two million grains per year - so it’s no surprise that he’s jumped at the chance to make Biryani from his home region of Hyderabad for National Curry Week.

Hyderabad is famous for its signature style of Biryani - considered a royal dish, eaten in the courts and Nawabs of Hyderabad. Phani’s is fragrantly spiced and layered with jackfruit marinated in a Hyderabadi garam masala, cooked dum style, and served with a punchy Mirch Salan and cucumber raita.

Phani’s Hyderabadi Biryani - Liverpool (gf, n) £9
Fragrant-spiced rice with jackfruit marinated in a Hyderabadi garam masala, cooked dum style, and served with a punchy Mirch Salan and cucumber raita.

Maity’s Alur Dom & Luchi - Leeds (nuts) £9
Silky-smooth white curry made with ground poppy seeds, cashew nuts and cream, with fragrant spices and baby potatoes. Served with Luchi - a puffed-up, deep fried flat bread made with maida flour.

Nomi’s Haleem - Manchester Piccadilly (v) £9
Dhal and oats simmered and mashed with fresh tomatoes, onion, garam masala until thick and rich, served with fresh, soft roti.

Dipanshu’s Lehsuni Saag Paneer & Kulcha - Bundobust Brewery £9
Paneer simmered in a smooth and savoury saag, tomato, and garlic sauce, served with pickles and fresh tandoor-baked kulcha flatbread.

Hara Bhara Corn Sliders £8
Fed’s Corn Fritter meets Bundo’s brunch patty. Two sliders packed with spicy Hara Bhara spinach, potato & sweetcorn patties and Desi omelette, with Fed sauce, green chutney, and Desi pickles. You can make this one vegan too!

Halloumi & Shrooms Tikka £9
A mash up of two of our most loved dishes. 24-hour Malai marinated Halloumi & Mushroom skewers, grilled and topped with hot honey and Fed sauce, with mint raita & dukkah. Contains nuts.

You’ll also find collab dishes & drinks at all Fed locations (for you lot with a sweet tooth!) - like our Mango Lassi Bircher and Desi French Toast, AND the Desi spiced Sunshine Mary & Dirty Iced Chai.
