Normans Banh Mi (minus the bread)

Pork belly marinated for 24 hours then slow roasted, chicken liver parfait, lime leaf mayonnaise, pickled cucumber & mooli, raw carrot and a tasty nuoc cham to tie it all together

To be perfectly honest to be lined up against some of the restaurants on the list is a little bit silly. I can only compare it to how it must've felt being Cape Verde at the World Cup walking out against Spain - but hey, we are here now so we may as well give it a r**t bloody good go!

Manchego Garum .. Nope I had no idea either 🤷‍♀️

The kitchen team have taken Manchego, rice koji, water and salt and blended it together and fermented it at 59 degrees for 6 weeks. They toasted half of the Manchego to impart a deeper, nuttier flavour, the rest went in as is.

It is intensely savoury with a super concentrated salty and nutty depth so we use it as a seasoning brushing it lightly on to our Irish potato cake to be finished with sour cream, dill pickle ketchup and Spenwood.

Is it weird? 100%.
Do I understand how someone could have the patience to ferment something at a specific temperature for 6 weeks? God no.
More importantly is it absolutely delicious? God yes.

Another new dish hit our menu last week! Our pork cheeks are slowly braised in apple juice and then tossed in a sweet, sticky glaze. We serve the cheeks on top of an apricot preserve with a hazelnut cream, finished off with a hearty drizzle of chicory root and hazelnut salsa macha🤩

Our menu has had a bit of a shake up this week with five new dishes making their debut!

Introducing our Irish potato cake, with Will's homemade manchego garum, sour cream and then finished with some grated Keen's cheddar. 🧀

In September, our team headed for a cheeky 3 day trip to one of the food capitals of the world - San Sebastian. We have now all just about recovered from the 27352 bottles of insanely good Txakoli drunk and 12451 steaks eaten...🥴

An incredible time away with our amazing team, a massive thank you to all of them for their hard work and dedication over the last 3 years and for making our trip an absolute cracker! ❤️

Thank you to all of the restaurants, bars and vineyards for putting up with 17 extremely giddy Brits. The food, drink and hospitality of all the places we visited was unreal and we'd certainly recommend taking the trip over if you haven't already!
