Launching Wednesday 3rd June, this menu marks the beginning of a summer journey that will continue to evolve as the season unfolds.

🍷 Our first collaboration was a huge success.

For those who joined us last night — thank you. We were delighted to help hosting a Catalan tasting menu with wine pairing alongside .

In a world where individuality and craftsmanship can sometimes be overshadowed, we believe it's more important than ever to celebrate independent hospitality.

This Spring 2026 menu has been Chef’s proudest creation yet 🌿

From New Forest asparagus and purple sprouting broccoli to fresh rhubarb and Hilmarton’s hand-picked wild garlic — this season has been all about celebrating the very best local produce.

Think fresh egg pasta, delicious spring lamb, indulgent temperate chocolate pots, and beautifully seasonal ingredients sourced as close to home as possible.

This week will be our final week serving our Spring À La Carte menu, before we launch our brand-new SUMMER menu next Wednesday ☀️

Inspired by charcoal cooking, BBQ flavours, and lighter, fresher dishes, we can’t wait to share what’s next.

✨ Our first collaboration evening will take place on 30/05/2026 at Wine Monkey, where Head Chef Matteo Romeo Marais (from The Duke) will be cooking a selection of vibrant Catalan tapas, paired with an excellent selection of Catalan wine inspired by Bryan's time spent living in French Catalonia, where his wine journey began.

✨ The second event — The Sicilian Supper Club — will be hosted here at The Duke Hotel on 27/06/2026.

This menu is especially close to Chef Matteo’s heart, celebrating his Sicilian heritage through a tasting experience of traditional dishes and flavours from the island:

* Wild mushroom arancini & truffle cream

* Parmigiana di melanzane

* Octopus carpaccio with orange & fennel

* Casarecce alla Norma

* Sea bream with saffron potato cream & salmoriglio sauce

* Pistachio semifreddo

* Sicilian lemon granita with brioche col tuppo

Alongside the meal, Bryan will guide guests through a pairing of premium Southern Italian wines included in the price, carefully selected to complement each course and tell the story of Sicily through its vineyards.

We cannot wait to share these evenings with you all.
