Kan is in the vault introducing a special arrival to the shelves a few months ago! We’ve cracked a bottle of the highly coveted Springbank 21 Year Old (1995, Batch 7), bottled by That Boutique-y Wh**ky Company for Whisk-e.

Here’s Kan’s English breakdown of this fresh Highland arrival:
"Hey guys, I'm Kan. This is one of the new bottles that has just arrived here at the Dornoch Castle Bar.
It’s the 1995 Springbank 21 Year Old, Batch 7, from That Boutique-y Wh**ky Company, released for Whisk-e.
On the nose, it's very nutty with strong, rustic malt nuances and a relatively gentle smokiness. On the palate, it’s centered around a grassy feel with fresh green fruit notes, with a deeper fruitiness rising from beneath. The finish offers a well-balanced mix of nuttiness, rich barley malt, and that signature Springbank fruit character.
Overall, it’s a beautifully clean, understated Springbank. Please come by and give it a try!"

For this week’s Thompson Tuesday spotlight, we’re pouring the exceptional Glenrothes 2007, 19 Year Old independent bottling from the Thompson Bros.

Tasting Notes:
• Nose: Spicy grapes, crystallised ginger, white pepper, meadow flowers, golden apples, shortbread, and buttery vanilla.
• Palate: Rich shortbread, honeyed marzipan, white grapes, fresh hay, butterscotch, and yellow fruits.
• Finish: Great length featuring pears, apricots, grapes, and a gentle touch of lightly oaked Chardonnay.

Dish #3 for Folktober Fest features Nduja haggis empanadas served with a crisp neep remoulade and fresh chimichurri. Our bar team paired this with a Smoky Old Fashioned.
