Punjab's relationship with handloom runs deep — there's a particular kind of magic in the narrow lanes of Katra Jaimal Singh in Amritsar, and Sirhindi Bazaar in Patiala — stalls spilling colour onto the street, cloth stacked shoulder-high, and if you're lucky, a doorway where a woman sits quietly working a needle through cloth, counting threads by feel, never once tracing the pattern first. This is Phulkari — Punjab's "floral work" — traditionally embroidered onto a shawl or dupatta, and stitched this way, by hand, since at least the 15th century.

Traditionally, a phulkari was started the day a girl was born into a family, worked on slowly across years, and finally gifted to her on her own wedding day. Every thread, every knot, carried a lifetime inside it.

Look up, and you'll find it here too — woven into the umbrellas above your table. A little piece of Punjab's lanes, carried all the way to Chichester.

Golgappa. Puchka. Pani puri. Whatever you grew up calling it, this week’s Namaste Edit is all about it🧡

Some say it dates back thousands of years, tied to Indian legend - though no one's entirely sure. What is certain is how far it’s travelled since: golgappa in Punjab and Delhi, puchka in Bengal, pani puri everywhere else.

In India, pani puri is as much a social ritual as it is food — crowds gather round the hawker, watching him crack a shell and fill it in seconds, everyone trading orders and chatter while they wait their turn. It’s eaten with the hands too, no cutlery in sight — and in Ayurveda, that’s no accident: touch is considered the first stage of digestion, the fingers sensing texture and temperature before the food ever reaches your mouth.

One bite, and it’s gone. You’re already reaching for the next.

The Namaste Edit: next up, we present our Mixed Grill — a variety of meats, all cooked over the tandoor (one of our favourites)🧡

Tandoor is quite a special cooking equipment — a cylindrical clay oven with roots stretching back nearly 5,000 years to the Indus Valley civilisation, and deeply tied to Punjab’s own culinary identity ever since. Communal tandoors have long brought people together in villages across the region, sunk into the earth and fired with wood or charcoal.

That same intense, smoky heat is what gives our mixed grill its char — searing the outside while keeping every cut tender within. Technique passed down through generations of tandoor cooks.

And the bonus: grilled, not fried — all that flavour, without the guilt.

We start with our showstopper: CHAAT.

Born on the streets of North India, chaat means “to lick” — a nod to just how addictive it is.

Legend traces it back to Mughal-era Delhi, when the Yamuna’s contaminated waters left the city’s royal physician searching for a remedy. His answer: a mix of spices, tamarind, and yoghurt, strong enough to cut through anything. What started as medicine turned into obsession — and centuries on, it’s still one of India’s most-loved street foods.

Your taste buds can detect five basic tastes — sour, salty, sweet, bitter, umami — and chaat hits every single one. Crispy, tangy, spicy, sweet, all in one bite. Every region claims their own version; ours is Punjab’s.
