🔥🤤AMARILLA🥂🔥

Sneaky anniversary lunch Amarilla - Scotty & his team never disappoint!

Working our way through the incredible menu, and paired with some sensational spanish wines, and literally right on the water, lunch doesn’t get much better than this.

The menu is incredibly well executed, with some of the dishes being finished off on coals. My pick - the braised beef croquets, sensational!

🐟🔥 KINGFISH SASHIMI WITH PONZU🎣💦

This one is ridiculously simple: fresh Yellowtail Kingfish, sliced thin and dressed with a punchy soy, lime and sesame ponzu.

🐟 Yellowtail Kingfish Sashimi
🥢 Light soy
🍋‍🟩 Fresh lime
🌰 Sesame oil
🌶️ Jalapeño
🌱 Chives
🧄 Crispy garlic
🍚 Puffed rice
✨ Toasted sesame seeds

Slice the kingfish around 5–8mm thick, mix the soy, lime and sesame oil and spoon it over the fish.

Then finish with chives, sesame, puffed rice, crispy garlic and finely sliced jalapeño.

Fresh, salty, citrusy, crunchy with just a little heat. 👌

One of those dishes that proves when you’ve got great produce, you really don’t need to do much to it.

Eat well.

🍖🔥IT’S DONE🔥🍖

Another season, and a beautiful piece of pork loin, cured old school - no nitrates, equilibrium method. Salt + spices, cold smoked and hung in the meat chamber.

Came up perfect. Can’t wait to share some charcuterie boards with friends soon 🙌🏼

⚡️BUSH READY⚡️

I knew from the moment I got my Flight Risk #777 e-bike, that I wanted to turn it into something that could be used across any and all of my adventures.
