Culinary Director joins forces with legendary Gary McBean of for an evening centred on whole-animal craft, provenance, and exceptional produce.
Since 1979, the McBean name has been synonymous with premium butchery at Prahran Market. For this evening, Gary brings his unparalleled expertise and a curated selection of cuts into the Omnia kitchen.
Melding Gary's master butchery with Stephen’s modern European approach, the menu will explore thoughtful sourcing, precise technique, and lesser-known cuts alongside familiar favourites. Expect bold flavour and a few surprises along the way.
