When life gets busy, which lets face it seems to be more often than not! My favourite way to have a quick catch up with friends is an afternoon drink.

A couple of hours max where we can just sit and chat.

If I have a 🥂 in my hand I definitely want something to eat too. It doesn’t need to be substantial but definitely self serve and quick to prepare.

A 🧀 platter is always nice but this week’s recipe is something deliciously simple and a little different. A recipe that can be easily adapted to suit your taste and what you have readily available.

A Souffle isn’t particularly tricky to make, in this instance it’s just a tasty Bechamel flavour base, lightened with Egg Whites.

A twice baked Souffle is brilliant if you are having guests over as you get the fussy bit and mess out of the way well prior to guests arriving.

It’s just heat and serve then.
