Prepared using the ‘all’onda’ method, risotto is one of Alessandro Pavoni’s most celebrated creations.

A true expression of land and sea, Abrolhos Island scallops from Western Australia meet a saffron infused chicken and clam stock risotto, made with aged Carnaroli rice. Butter basted scallops are finished with a delicate roe emulsion, balancing richness, depth and coastal freshness.

A new menu to explore by the water, bringing together the best of land and sea or find your place on our Terrazza bar for drinks, small plates and that easy aperitivo moment as the sun begins to dip.
