Some dishes are so good, you want them for the rest of your life.

Our Marry Me Mushrooms & Spaghettini is built around incredible oyster mushrooms from Mr Brown & Towns, a small Launceston farm producing exceptional gourmet mushrooms right here in Northern Tasmania.

The oyster mushrooms are roasted until deeply savoury and served with spaghettini in a rich parmesan cream sauce with semi-dried tomatoes. Comforting, earthy and packed with umami, it's the sort of dish that explains itself after the first forkful.

Save your bended knee, the answer is yes, you can have it forever. As long as forever is the 7th of June when Feungi The Festival concludes! Get it while you can... Built around exceptional local produce and available for a limited time as part of the Fungi Tasting Trail from 29 May to 7 June 2026.

๐Ÿท A Tamar Valley favourite ๐Ÿท

Holm Oak is the labour of love of winemaker Bec Duffy and viticulturist Tim Duffy, who have been crafting small-parcel wines in the Tamar Valley since 2006. Family owned, fiercely independent and deeply connected to place, their wines capture everything people love about cool-climate Tasmania.

One of our favourites is their Pinot Noir.

Bright and expressive, it opens with dark cherry, red berries and sweet spice before revealing layers of strawberries, red stone fruit and subtle savoury notes. Fine tannins and restrained oak give way to a long, elegant finish that keeps you coming back for another sip.

It's a beautifully balanced wine and a natural companion to many of the dishes coming out of our kitchen, particularly anything featuring mushrooms. If you're enjoying one of our Fungi Tasting Trail specials, a glass of Holm Oak Pinot Noir alongside is a very good decision indeed.
