The hospitality industry needs a resurrection- as I often say β€œ it is like the Wild West minus a Sheriff β€œ kinda lawless and poor regulations .
From what I know Wes Lambert is pretty much the only one making some noise in his pursuit to make Hospitality a great industry in all areas .
Poor conditions- many Awards wage specifications- inexperienced Owner / Operators shifting the goalposts- many skilled, trained professionals leaving the industry for better money and lifestyle and done with the Cowboy mentality and approach that a once great industry has descended to because Hospitality has become lawless and we do not have one true leader let alone a Sheriff .
I have a proposal that I would like to see come into play in my pursuit to introduce some good solid regulation into my Industry, which overall is Hospitality.
I believe that every person that works in a kitchen whether they be a a a whether he or she is and whoever else, must have a food safety certificate- you need a white card to work on building sites right but any f***r can just jump in a kitchen. This is not right.
Get behind me on this one gang and we can make our Industry great again πŸ‘

What do Chefs do when they sell their restaurant @ πŸ”ͺ - well you sleep in on Sundays and don’t worry about debriefing a busy Saturday night service - have a nice coffee and read the Sunday paper and then you jump on a tram and head to Circular Quay and jump on the Ferry in the to because you want some from πŸ‘

So many asking β€œ what you going to do now Anthony that you have sold your restaurant β€œ and my thoughts are β€œ not really sure β€œ - I have some ideas but for now I just want to reconnect with myself as I have acknowledged that I became disconnected with myself. My plan is to for a few months and reconnect with myself and then what - do I become a do drive - hangout with - be a or god knows what - Open another or go on an - one thing is for sure and that is - my desire to cook and play with food on my terms - no deadlines - no expectations- no need , just rather,
rather simply my own desire to create and plate and express my art , my craft and offerings in a beautiful, simple- masterful way with a educational and soulful attachment holds a lot of importance to me πŸ™
