Wagyu sirloin, mushroom purée, pomme purée and jus, inspired by the techniques and flavours from the 2 Michelin starred restaurant I had the privilege of working in.

Simple in appearance, but every element is built with precision, balance and depth of flavour. The kind of dish that reminds me why I fell in love with fine dining in the first place.
