Conch (sea snail) is a protected species in Bonaire and may not be caught here. The conch in our chowder does not come from Bonaire but from Honduras. In Honduras it is not taken by small-scale fishers but supplied through a limited, regulated industrial fishery program. This program operates with a small fleet and a strict annual quota, and is exclusively intended for export. This allows us to serve you legally harvested conch.
