Hello Saigonese!

My name is Ono, a Japanese owner-chef of TRATTORIA Three Little Owls, a restaurant located in District 1.

I am currently looking for new staff to join our team.

Three Little Owls is a casual Italian restaurant.
In other words, a Japanese chef is serving Italian cuisine in Vietnam.
When we first opened, people said it was crazy, but perhaps Italian food made by a quirky Japanese chef is interesting—because we are quite busy every day.
I enjoy working every day with an amazing kitchen team.
Our current service staff are also fantastic, but unfortunately, as they are students, they are moving on to their next steps.

So, we are now hiring for both a manager position and service staff.

The manager role at my restaurant covers a wide range of responsibilities.
You will need to handle daily cleaning, dishwashing, accounting tasks, and ordering supplies.
Although it is a casual Italian restaurant, we offer over 100 types of wine, and serve a variety of dishes ranging from traditional Italian cuisine to modern approaches.
The manager position is by no means easy, but you will definitely deepen your knowledge of Italian cuisine and Italian wine.

We are also planning to open several more locations in the future.

For the manager position, English proficiency is required, but for service staff, basic English is sufficient.
My English isn’t great either.

Bassano style white asparagus & soft-boiled egg with truffle oil

White asparagus appears on the menu every year during this season.
It is also a classic spring ingredient in Italy, with Bassano del Grappa being one of its most famous production areas.

It is commonly served with a sauce made from crushed boiled eggs and vinegar, but at Three Little Owls, we’ve once again prepared it as an appetizer inspired by œufs mayo.

We also offer well-chilled wines from Veneto to pair with it.

・Tataki di bonito scottato alla paglia, con insalata di crisantemo e cipolla rossa in agrodolce
・Straw-grilled bonito, crown daisy salad & sweet sour red onion.

In Japan, bonito is a representative ingredient of spring, traditionally seared over straw.

We’ve adapted this traditional straw-searing method into Italian cuisine.
Bonito from Nha Trang is lightly seared only on the surface and served as a thick-cut carpaccio, paired with a crown daisy greens salad.

For an accent, we add sweet and sour red onion agrodolce.
Agrodolce is a Sicilian technique, from a region also famous for bonito catches.

To finish, we generously drizzle Sicilian olive oil.

A dish that reflects Vietnam × Japan × Italy—truly in the style of TLO.
Please enjoy it with Sicilian wine.

One of the representative ingredients of spring, young onions.
They have a fresh texture and natural sweetness, and they are one of my favorite ingredients.

Because the ingredient itself is already delicious, simply adding a little butter and salt creates a wonderful sauce.

Agnolotti del Plin

A new handmade pasta has arrived.
The filling is rabbit meat and homemade sausage.
It is tossed in a porcini and butter sauce, with a touch of rabbit-bone sugo added for extra depth of flavor.
The wine pairing is Barbera.
If you prefer Nebbiolo, a young-drinking one would be perfect.
For white, we have a long-aged Gavi resting in the chef’s cellar, so please ask the chef.
