Frankie & The Tree Brewing Company Frankie & The Tree Brewing Company Frankie & The Tree Brewing Company is a fun endeavor being tackled by Frankie Stefano and Dustin 'The Tree' Devoto.

Our mission is to create great tasting, artisanal and experimental beers. We are by no means experts of the craft of making beer but with the help of friends and family we will be great brewers.

Dusty and I are brewing next week with special guest Ian Deutsch, all the way from Boston. By his request we're going to do rye ale. Look out for the recipe and the some of the pictures/videos we'll be posting from the brew sesh.

Just a quick update on the brown ale. In just a few short weeks, the brew has really rounded out. Nice banana notes in the nose, chocolate malt comes through nicely. Pretty light on the palate, touches of the 7.9% presently but not too bad. Finish is smooth and the color needs work. We didn't put any irish moss or whirl floc in this so definitely next time we'll do that.

Just kegged the brown ale. Thiefed a small sample, it appears much more hoppy than intended but still pretty good FG finished at 1.01 for a final abv of 7.9%. Should be ready to drink in 3 or 4 days.

The Lip Smacker Brown was a near perfect brew. OG coming out at 1.07 with an estimated final ABV% at 5-6% which is less than what we were going for. Our one goof was that we added a 6th gallon however, because we maintained such a low controlled rolling boil we still ended up with almost a full 6 gallons, this reason being why our OG came out a little low. Didnt quite get the Yeast flocculation I was hoping for, maybe next time we'll venture into doing a yeast starter. We're still going to add the french oak and the vanilla so it will still be a pretty complex beer, little tweak here and there and this will be one smokin' brew.

Ever wondered what a Mr. Beer tastes like?? Its easy to dismiss this, what I call, easy mac version of beer brewing, but I had a chance to make some a few weeks ago and it came out great! Come on by Stefano any time to get a taste of this surprisingly tasteful brew!

Frankie's Review of the Avery Brewing: Old Jubilation..

Grade: C +

Color: Pours a dark Auburn Color. There are flashes of browns and reds. Head Retention is strong and tight.

Smell: This is where I thought this beer could have been better. It lacked aromatics but you can pick out slight maltiness and biscuit notes.

Taste: Old Jubilation is smooth. It has a great roasted nuttyness that definitely lends itself perfectly to a solid winter ale. The Alcohol can definitely be picked up on the finish.

Mouthfeel: Old Jubilation is pretty light on the tongue. I can immediately feel that warm-nutty-winter ale style working its magic on my cheeks. As I commented before the Alcohol is apparent in the finish and is a nice tough to the end of a good brew.

Overall: Lacked complexity and aromatics. Had great warming characteristics and roasted nutty flavors. I will surely have more of these before the Holidays are over!

We bottled our Belgian Tripel last night. We got a quick taster while we were at it and WOW...Its going to make for 1 GREAT Holiday brew. All spice on the tongue, medium bodied. It has some rounding out to do, little sharp in but a few months in the bottle should help. Exciting!

We picked up the new Beer Smith 2 not too long ago and it has really helped us with notes on our brews and helps "see" recipes more clearly. We'll continue to review different brewing softwares, right now BS2 is top notch.
