We have an update video from Monday, 10-20-25! At the posting of this video, we now have the roof open, and the replacement of the burnt joists, roof, and brick has begun! We'll keep updating and hope to announce our reopening date...fingers are crossed for April!

A huge thank you and shout out to Tim Downey and the Tiho's Tequila Bar and Restaurant staff!
Tim texted offering us a safe harbor and dinner while we waited for the Windsor Severance Fire Rescue
to do their job with all the necessary precautions and okay us to grab our personal belongings before heading home last night. This is why we LOVE the Windsor community!

We wanted to share with you that we had a kitchen fire at Chimney Park earlier this evening. The entire staff, guests, and all of our neighbors are safe, and fortunately no one was injured.
A huge thank you to the Windsor-Severance Fire and Police Departments for their very quick response, controlling the fire swiftly, to minimize the damage. We are immensely grateful for their service and also that no one was harmed.
The support coming in from our community has been amazing!! We thank all of you for reaching out to us. We will keep you updated as we learn what our next steps are.

Our Story

Chimney Park Restaurant & Bar, established in 2007 by chef and owner Jason Shaeffer merges the refined elements of dining with a feeling of accessibility and simplicity. The restaurant has become a regional, state-wide and national dining destination in Northern Colorado. In recent years Chimney Park has won the DiRoNA Award of Excellence, OpenTable.com Best Restaurants in America, 2011 and 2015 and Wine Spectator Award of Excellence 2014 through 2018. Housed in historic downtown Windsor, Chimney Park’s original building from 1895 has undergone a recent renovation in 2017, the restaurant’s 10th anniversary. Chimney Park sources local, seasonal and organic products from Colorado and the surrounding region. Whether it’s a special occasion, evening with friends or nightly happy hour in the bar, Chimney Park offers an approachable, sophisticated atmosphere.
