As I stand out here getting ready to cook some wings - there's a few things that are beyond important - Including messages like this that guests send... This will be last political post you ever see on this page, because this is where the rubber meets the road. Those that know me - which is all of you, know that I'm upfront and open. One of the best questions asked at the last debate in Grand Saline was how I'd represent both Republicans and Democrats if elected to this office... Very simple, County issues are not bi-partisan issues - they are people issues and one of the largest ones is the fact our government would hold the property you own as hostage if you don't pay your rent in the form of property tax. Doesn't matter your party affiliation - you're not immune. This change starts at the local level.

Honestly, between you and I - I'm glad we're not opening a new location in Wills Point, yet. I'm happy for the beef producers, but we can't afford to serve steaks or anything right now with the way beef prices are. Plans are still in the works, but there's going to need to be a change in the economy to enable that. I'd be dumb to open a restaurant right now with the current economy. I'm not blaming the government, but I'd definitely blame me for not being more involved at this point.

I know the power of the people - all of them, regardless of party affiliation. Change starts with you and for the next little while, I'm going to dedicate every ounce of energy to making the change at the local level on your behalf. We need change. My, yours - all of our futures depend on this change and we need leaders willing to make it.

I feel like right now this will be a run-off between Dan Morrow and myself in Pct. 4. As such, we're going to have a very open discussion and debate on Sunday at 3 - Pct. 4 Commissioner Live Discussion - Morrow and Hanson . Dan is a good guy, but we're not the same and have different ideas and approaches, but I feel one of us will be in this seat very soon - it'll be up ya'll. If you live in VZ County - join in. The outcome of this could likely influence your local government regardless of your Pct... Open, unscripted and no - we're not going to let Bert put makeup on us. Thank you Grand Saline Sun for producing and distributing to VZTV.

It's imperative people start to get involved. A good start would be to tune in this Sunday and ask questions - or watch later.

Good morning ya'll! There are a lot of questions about my run for Van Zandt County Commissioner Pct. 4 and 3 Knocks. I've always felt it was important for citizens to be involved with their government and in some respects, is their civic duty to serve the people for at least one term in 'something'.

We're missing 3 Knocks more than ya'll, but at the moment - I'm grateful 3 Knocks isn't open right now. Food prices are through the roof and with the price of beef, I don't think I could consciously sell a steak for the price we'd need to charge to make it all work. Hopefully that changes in the future.

I'm playing it by ear right now. If by chance I am elected, my priority will need to be what the people elected me for - to represent them in their County Government. That doesn't mean that planning stops on the new 3 Knocks location - It'll just give me more time to make the plan better.

So when we talk about hidden gems, this is one of them. I've known Chef Hobbles for a long time. One reason for doing prime rib at 3 Knocks was to come close to the mastery of Hobbles Prime Rib, which is legendary. Last night we went with a chicken fried meatloaf, smothered in a rich and creamy tomato sauce with smashed red potatoes. Lordy... Sheila had their version of a hamburger which was out of this world. Somewhere in our food induced coma, he brought out fried banana pudding. Y'all - try this place out. It's small with attention to service and I can easily say - one of the best chefs around. We'll be back.

Some are aware, and some are not - but we partnered with Chital Travel Center to help them get their new travel center kitchen functional, with amazing food and staff. The owners are some of the best people I've ever met and I can see this partnership extending into our own ventures very soon - hopefully.

We always close our Turkey orders early because there are only so many birds we can physically do because of smoker and cooling space. Unlike 3 Knocks, these folks have some crazy smoker and cooling capacity. Because of that, we're ordered a bunch of large birds for all those procrastinators out there.

So - Turkey orders are back open at 3knocksbar.com (large turkeys only). We'll have them ready to pickup, here at the travel center, starting Monday and ending Wednesday evening. They'll be chilled, in a pan and ready to reheat for your big Turkey day, whatever day that might be.

Wanna be the superstar of your Thanksgiving dinner? Serving one our smoked birds is a really good start. I've gotten through some pretty awkward family gatherings at Thanksgiving simply by having one of these birds on the table. Uncle Joe (twice removed on Sheilas side of the family and cousin to great aunt June) completely forgot about that conversation from a few years back where I might have mentioned in passing that he was controlling and manipulative. This happened somewhere between his first and second bite... bringing families together one Turkey at a time.

YES, back by popular demand - We'll have smoked turkeys again this year! We do a lot of things to these birds that make them better than the rest. If you've had one, you know what we're talking about - if not, now is your chance. Birds will be frozen (in a bag) and can be reheated or served cold on your turkey day, whatever day that might be.

Beginning Oct 1, birds can be picked up in Van OR we'll deliver once a week to Wills Point if we have more than 5 orders (Sundays 2pm-2:30pm Brookshires parking lot).

Thousands keep asking "What are y'all even doing without 3 Knocks?"... Well - getting back to the basics. For a little over 2 years, our property went from a nice place to live with questionable people to a place that has been completely abandoned of all people and care....

It's been amazing to actually live at home, rediscover my family, purpose and reason for being. I've been mowing, cussing, fighting with my family and in general - finding my myself. It's been wonderful.

Yes... I've been working on THE EMPIRE plans. I have $12.32 and between finding my roots and mowing, I've been seeking out folks that have tasted the cheese, but yet have no fear of the trap. I'm surprised by how many there are...

At the end of the day, we're blessed and thank y'all for all the continued support.

Not quite on the 'chicken tender' level, but a close second. A restaurant has over 1 billion ways to get bad reviews and this isn't really one of them, at least I didn't think so until now.

Since being closed, I now fully understand why cow dogs without cattle to work go a little crazy... That's sort of my situation right now but between resting, drinking beer, looking stellar and making our residence look like it hasn't been abandoned for 2 years - I'm surviving it...

A little late on this, but to be fair, it seems like last night just ran straight into today... wait - it did.

A huge thank you to EVERYONE that's ever came here and especially those that showed up this week to support us and our staff. Our servers get a 'tipped wage', which is standard in the restaurant business. I'd asked ya'll to fill their pockets before we closed Sunday - ya'll did that and a lot more. Over $7500 was paid out in credit card tips this week - and that doesn't count cash tips, which were massive. From the bottom of my heart, thank you for taking care of my people.

A special shout out to all the musicians that just showed up to play, free of of charge, to close us out. Xavier, Sully Sullivan, JD Church, Preston Barrett, Luke LaPrade and Travis Bolt.

Thank you all from all of us - We're not done yet, but I'm for sure going to take some time to work on our house and property, which looks abandoned (because it has been).

Ya'll rock and I'll keep you updated on our next endeavors.

To be completely honest, we're not looking for 'normal' people to work in the kitchen or back of house... It's a brutal environment - LOUD, super fast paced, hot and if we're being completely honest - sort of like a really horrible version of Hell, except much worse. 'Normal' people like you and I last less than a few hours doing what back of house folks do all day, everyday. What are we looking for exactly? It's difficult to put into words - but it's not you or me and I know it when I see it.

Sean aka "SeanSon" almost didn't hired because he seemed a little "too normal" to me. Luckily for 3 Knocks, Sam over-ruled my decision and hired him.

As it turned out - Sean IS NOT normal at all 😂😂😂😂. He lives on some sort of strange drink like Ensure and loud music that ranges from death metal to opera and absolutely everything in between. If you've been close to our kitchen, if you can hear Sean over the roar of his music, the grills and other staff - you'll hear him talking like a hibachi chef, to an imaginary crowd... all the while multitasking 15 orders flawlessly, directing others in the order process and basically creating perfect chaos and food that is the heart of really good commercial kitchen. When I say Sean isn't normal, it's in the best possible way as he's way too good at his job to even be considered 'normal'. Thank you SeanSon for all you brought in training and expertise, but mostly thank you for being real, a leader in the kitchen and killing your job like no one else. You're amazing and that in part, made us all amazing.
