🍔🎓 BURGER OF THE WEEK: WINSTON'S SIU BURGER 🎓🍔

Some burgers start in a kitchen.

This one started at a charcoal bagel cart in Carbondale.

Back when I was a freshman at Southern Illinois University, a friend and I were walking back to the dorms after a night out.

We were hungry.

Most places were closed.

Then my friend asked if I wanted to get a bagel.

A bagel?

I remember thinking that sounded like the least exciting late-night food imaginable.

He looked shocked.

"You've never had Winston's?"

Apparently everyone at SIU knew Winston and his legendary late-night bagel cart except me.

Soon enough we found Winston cooking bagels over an open charcoal grill.

I figured I'd get something simple with butter and cream cheese.

My friend wouldn't allow it.

"No, no, no. You're getting THE WORKS."

Then Winston started rattling off ingredients that sounded completely ridiculous together.

🧈 Butter squeezed from a bottle

I was convinced I was the victim of some elaborate joke on the new guy.

But I took a bite anyway.

And I was completely wrong.

Every ingredient somehow worked together.

Sweet.

Savory.

Crunchy.

Creamy.

It was like a symphony of flavors.

For the rest of my college years, Winston's bagels became my favorite late-night tradition.

Many years later, while creating menu items for Bamboozels, I started wondering:

"What if those same flavors worked on a burger?"

So we tried it.

And somehow...

they did.

🍔 This week's Burger of the Week is **Winston's SIU Burger** — a tribute to late nights at SIU and a legendary bagel cart that every student seemed to know.
