April 16th at Prime29. Ghost Block Estate Wines from Napa Valley alongside dishes we don't offer to the public.

Ghost Block's 2024 Sauvignon Blanc opened the night with Pacific Shellfish Ceviche with bay scallops, shrimp, citrus vinaigrette. Bright and clean, the right way to start.

The salad course brought the 2022 Oakville Zinfandel. Golden beets, goat cheese, pomegranate seeds over arugula and frisée. The pairings were doing their job quietly with each wine pulling something out of each plate.

Oakville Quail arrived third. Quail breast, red wine demi-glace, and chipotle aioli alongside the 2022 Ghost Block Oakville Cabernet Sauvignon. Napa's Oakville AVA in the glass, Prime29's kitchen on the plate. The room felt it.

Then Creekstone's Prime Filet Mignon, aged for 29 days. Boursin crust, wild mushrooms, spinach, shallots, potato hash. The 2022 Yountville Cabernet Sauvignon.

The night closed on Ridge Apple Crisp. Philo dough, vanilla gelato, salted caramel and Ghost Block's 2022 Late Harvest. Sweet, unhurried, and earned.

Napa's legendary winemaker, Maayan Koschitzky, flies in for an exclusive dinner at Prime29 with La Pelle Wines, his small-production label that reinforces good wine is grown and not made.
