🐟 STAFF SPOTLIGHT… OWNER EDITION! ❤️
You know the crew… but this week, it’s time to meet the woman behind it all. ❤️
With America’s Best Restaurants coming THIS FRIDAY and our 6-year anniversary right around the corner, there couldn’t be a better time to put the spotlight on our owner, Lola Spencer!
In September 2020, Lola took a chance on Catfish Charlie’s. She loved the location, it was close to home after years in the lake business, and most importantly… she missed the restaurant industry.
There was just one tiny detail — she was opening a restaurant in the middle of COVID. 😅
When we asked what she remembers most about those first few months, her answer was pretty simple:
“Am I nuts?” 😂
Six years later, we think she has her answer.
COVID was certainly one of the biggest challenges, and like just about anyone in the restaurant industry will tell you, finding good help continues to be one. But when Lola looks back on the last six years, what she’s most proud of isn’t just how much Catfish Charlie’s has grown.
It’s the people. ❤️
The bonds she’s formed with so many of her staff. The regular customers who have become more like family. And, of course, the fact that this little restaurant along the creek has more than DOUBLED its business in six years. 👏
Her favorite thing on the menu? Sea Hogs! 🥓🍤 And she may be a little biased considering she created them herself!
As for something customers might be surprised to learn about her? Lola says there probably isn’t much left you all don’t know. 😂 But long before she was the woman behind Catfish Charlie’s, she was just a little poor girl growing up in Lexington, Missouri.
And this Friday, America’s Best Restaurants will walk through the doors of the restaurant she took a chance on nearly six years ago. 🥹🎥
We’d say that chance paid off. ❤️
