Some whiskies tell you exactly who they are from the first pour.

Others take a little longer.

Dark Arts Empyrean Vol. 2 was one of those bottles for me. The more time I spent with it, the more the story changed.

Name a better label glow up than Onyx & Amber.

I knew it would be special when first shared early mockups of the label last year, but seeing it in person is something completely different.

The texture. The colors. A label made from actual stone. It feels considered in a way a lot of whiskey packaging doesn’t anymore.

That’s what the Virginia 250 pairing dinner at Vault & Cellar felt like.

An evening built around Virginia whiskey, gin, rum, heritage grains, thoughtful cocktails, and some of the people quietly shaping one of the most exciting craft spirits communities in the country right now.

Found North Batch 012 took a little patience.

My first pour felt lighter and more restrained than expected. The second pour the following day completely flipped my opinion and opened into one of the more distinctive Found North profiles I’ve had yet β€” toasted marshmallow, crΓ¨me brΓ»lΓ©e, bright tannins, and escalating rye spice wrapped in an incredibly creamy mouthfeel.

This one feels closer to refined American Light Whiskey than traditional Canadian whisky at times, yet somehow softer and more polished throughout.
