I have the BEST team. ❤️

And today I want to recognize the people who probably get the least amount of recognition and credit — our Back of the House.

They are the heartbeat of this place.

They stand over a hot grill for hours when it’s 90+ degrees outside. They stand over boiling fryers, surrounded by heat, noise, tickets and nonstop volume — and somehow keep pushing.

Think about this for a second:

Six cooks.
270 seats.

On a packed day, those six people are responsible for getting hundreds of meals out of that kitchen — hot, right and on time.

And when unforeseen circumstances happen? They show up.

Today this crew walked into a kitchen that needed to be rebuilt from the ground up — prepping, portioning, making things from scratch and doing whatever needed to be done so we can open tomorrow without missing a beat.

They didn’t do it for recognition.
They didn’t do it for a Facebook post.
They didn’t do it for applause.

They did it from the heart.

Because that’s what a real team does. When one part of this house needs help, the rest of the house stands up.

FOH. BOH. One house. One team.

I see you. I appreciate you. And I am incredibly proud of you.
