Q. Where do you get your inspiration for the VIG Park West neighborhood features?

A. My inspiration for the Vig Park West neighborhood menu comes from my strong Latin cuisine background, combined with bold flavors and a focus on cross-utilizing in-house products to control waste while still delivering high-quality dishes to our guests. The pot pie was a seasonal winter addition—something nostalgic that reminds guests of childhood comfort foods, but elevated beyond the traditional version.

Q. What makes the VIG Park West kitchen special?

A. Our consistency and creativity. It’s an upscale tavern-style American grill with a Latin fusion influence, as I like to describe it. From our weekly specials packed with bold flavors to our willingness to accommodate guest requests—whether it’s off-menu items or bringing back old favorites—we always strive to create the best possible experience. Our team is made up of passionate, driven young culinarians who constantly work to improve and grow every day.

Q. What is your favorite dish to cook at home?

A. My favorite cuisine to cook is a blend of Italian and Hispanic. One of my go-to meals at home is arroz con gandules with slow-roasted pork, tostones, and empanadas—a true staple in a Puerto Rican household. What I love most is the versatility; you can create so many different dishes from those core components.
