Blending day with Tier V last Saturday.

We pulled samples. We walked through how blending works. We tasted the barrels together. Then we handed it over to them.

Members worked in groups, tasted on their own, built blends, and put them up to a vote. Brian Dalton's won.

The blend will stay close to itself, with just spice tinctures at sub-threshold levels for depth, no big flavors layered on top. Our Tier V members wanted it released pretty straight up, so that's where it's headed.

Next Tier V blending session is this fall.

Two beers. One story.

When Eagle Rock Brewery closed in 2024, Jeremy and Ting entrusted us with the final batch of Yearling — their Flemish red ale. We blended two beers from it. Ghosts in the Wood leans into fermentation depth. Phantom Limb leans into the natural pairing of Flemish red and fruit.

Both are about celebrating what was in that beer rather than covering it up.

One More Round. A celebration of Eagle Rock Brewery with Cellador Ales.

Pouring Ghosts in the Wood and Phantom Limb — two beers we made from the final batch of Yearling, Eagle Rock’s Flemish red ale. Also pouring Ouroboros and Tepache.

Jeremy and Ting from Eagle Rock will be there.

No cover, no tickets. Just show up.

When Eagle Rock Brewery closed in 2024, Jeremy and Ting asked us to take care of something for them. A foeder of Yearling — their Flemish red ale — has been aging in our cellar since. We blended two beers from it. Ghosts in the Wood and Phantom Limb.We’re pouring both at a release event at Verdugo Bar on May 8th. More soon.

Tepache Seltzer. 30 minutes after pitching cultures.

Oak barrels, house mixed cultures, real fruit. The same way we approach everything in the cellar.

Is that still a seltzer? Who knows.

In a Silent Way. A wild ale aged on noyaux — apricot pits — from Masumoto Family Farm and Cirone Farms. Six months on pits, neutral oak barrels, bottle conditioned with honey. The noyaux character is subtle but clear. It becomes part of the beer rather than taking over. The name is a reference to one of my all-time favorite albums. If you know the album, it’ll make sense when you taste it. If you don’t, consider this an invitation. Available now.
