Thank you, Stillwater, for two years of memories, support, and meals shared together. ❤️

This is a difficult message for us to share, but we’ve made the decision to pause operations at Xelas. This is our last Weekend Last day Saturday day Saturday 10/24

We’ve poured our hearts into this restaurant. Unfortunately, sales haven’t been enough to sustain operations, and we need to take a step back to evaluate what comes next.

To our team: thank you for your hard work, your dedication, and for believing in this project alongside us. To our guests, friends, and everyone who walked through our doors: thank you for letting us share our food, our culture, and a piece of our family with you.

We’re also exploring investment opportunities that could help make a new chapter possible. If you or someone you know would like to connect, please reach out directly.

For now, it’s time to pause and give ourselves room to think carefully about the future. We don’t yet know what that will look like, but we’re deeply grateful to everyone who has been part of our story.

In honor of Hispanic Heritage Month, our Chef’s Table celebrates the flavors, ingredients, traditions, and stories that inspire our kitchen.

Every Chef’s Table menu is different and thoughtfully created for that evening, so each visit offers a new six course journey from the first bite to the last. 🇬🇹✨ Here’s a look at some of the menu items you may find:

🥔 Hilachas Terrine
Crisp potato and Guatemalan shredded beef, chile guaque demi glace, warm escabeche and roasted garlic

🦀 Crab Corn Pepita
Crab and roasted poblano ravioli, sweet corn velouté, green pepita recado, charred corn and epazote

🔥 Tamal Nigiri
Seared tamal, mole glazed pork belly, horseradish crema, pickled red onion and radish

🌶️ Chile en Nogada
Roasted poblano, duck confit and fruit picadillo, Guatemalan macadamia nogada and pomegranate

🥩 Churrasco Mama Tita
Skirt steak roulade, black beans, potato pavé and Mama Tita chimichurri coditos

🍮 Torrejas
Caramelized brioche, cinnamon custard, Guatemalan coffee ice cream, panela rum caramel and candied orange

The breakfast burritos EL SAZON Tacos & More are legendary! Also try their Birria ramen and tacos crafted by Chef Cristian De León—who originally started the EL SAZON Tacos & More Tacos and more concept from an Eagan gas station and has expanded to full-service dining Xelas by El Sazon alongside mixologist Zoilo crafting regional spirit cocktails. Its Mayan cuisine from Birria and Co**ha French Toast to the gas station to Stillwater in this weeks episode of Taste Buds with Stephanie on youtube, tubi and our home station Fox 9 every Saturday at 8:30 am and get my Birria recipe from this episode to fill your burritos and bowls its one of my favorites inspired by chef Cristian.

We celebrate Guatemala’s Independence Day and the beginning of Hispanic Heritage Month by honoring Guatemala, Tierra del Quetzal.

The resplendent quetzal is Guatemala’s national bird and a powerful symbol of freedom. Sacred to the ancient Maya, it remains an important part of the country’s identity appearing on Guatemala’s flag and coat of arms and lending its name to the national currency. Its brilliant colors reflect the beauty, history, and pride of Guatemala. 💙🤍💙

Served warm with Oaxaca cheese fondue and honey-b**r mustard.

🌭 Guatemalan Longaniza Brat — $14
Served on a toasted roll with b**r-caramelized onions, pickled red cabbage and guajillo mustard.
