St. Croix Brewing Company

St. Croix Brewing Company Stillwater’s soon-to-open boutique brewery, beer garden and Public House. Founded in the winter of 1858 by Gerhard Knipps, St. Croix Brewing Co.

was located in the north end of Stillwater, known as Dutchtown, near the Tamarack House. Like many early pioneer breweries of the valley, it served the local loggers of the area. As Stillwater grew, the St. Croix Brewery was sold and its operations ceased in 1877. The buildings and land were used for various mercantile interests until 1935 when they were razed to make room for the new Highway 95 r

ealignment. In 1995, a local homebrewer brought the St. Croix Brewing Company back to life and changed it to the St. Croix Beer Company. With the exciting rebirth, the brewery's inaugural beer, St. Croix Maple Ale, was introduced. In 2003, Tod Fyten purchased the St. Croix Beer Company and renamed it the St. Croix Brewing Company, LLC. For his 25th wedding anniversary gift to his wife Madeline, Tod gave his wife the keys to the St. Croix Brewing Company with the signing of her purchase of the Brunswick House and returning the brewery to its home in Stillwater.

As we welcome in a new taproom and era, we felt it was time to welcome in an image refresh, too...

So, say hello to the new St. Croix Brewing Co. logo and website!

One of our core values is to be a steward of history, and this refresh celebrates just that - our historical roots dating back to the 1850s, the water of the nearby St. Croix River, and the area's storied and celebrated river boats.

We also want to give an enormous thank you and shout out to Randy Mosher, who helped design the new logo!

It's amazing what a little primer can do! After A LOT of work patching and smoothing the walls, we finally finished priming the fireplace rooms today. These rooms will serve as two main seating areas on the first floor. 🍻

On this happy , we'd like to introduce two new residents to the St. Croix Brewery - our new Yorkshire square fermenters. Yorkshire squares originate from northern England, and larger versions of our tanks can be found in the likes of the Samuel Smith and Black Sheep Breweries in England.

Brewer's Note: "These tanks are known to produce fantastic full-bodied beers, think Samuel Smith's Oatmeal Stout. So, we're looking forward to using these tanks to brew our St. Croix Cream Stout and sharing it with you soon!" - Tod

Did you know the original St. Croix Brewing Company dates back to 1858?

Founded by Gerhard Knips in Stillwater, the brewery was located on the north end of the city adjacent to Minnesota’s first courthouse and capitol building, the Tamarack House. Like many early pioneer breweries of the valley, it served local loggers.

Progress update! We’ve been hard at work behind the scenes—resurrecting our gardens, working on plans with the City of Stillwater and various contractors, updating our branding (more to come soon!), and hunting down some amazing pieces for our space.

Scroll through the images to see a few highlights from our work taming the gardens over the past several months, which has included:

➡️ Restoring the historic pergola and arbor dating back to the days when the property was the Harvest Inn
➡️ Removal of A LOT of invasive species and weeds (buckthorn and massive wild grape vines that were choking out trees),
➡️ Planting some new native species,
➡️ Mulching and building out a formal border for new plants (to be planted this spring!), and
➡️ Finding enormous worms!

There are so many features about the that we love (and think you will too). One of our favorite discoveries while restoring the property has been the wild grape vines, which cover the entryway into the back beer garden. It's such a delight to see the changing colors of our very own Concord grapes. 🍇

Plus, we've been told that these vines date back to the Brunswick family, who owned the house from 1863 until 1969!
