Some nights are about the bourbon. The best nights are about everything around it.

Last night at Cork, we hosted an unforgettable 2XO Bourbon Tasting with Dixon Dedman—great whiskey, great stories, and a full room of people here for both.

We poured through 2XO American Oak, French Oak, White Oak Rye, and closed with something special: 2XO Rapper’s Delight, the limited-edition collaboration honoring the Sugarhill Gang.

Dixon didn’t just bring bottles—he brought the story behind 2XO, sharing his philosophy and the craft of his signature two-barrel finishing process.

A big thank you to salty_boards for the cheese pairings that elevated every pour.

And most importantly, thank you to everyone who packed Cork and made the night what it was. This is exactly the kind of experience we love bringing to Southern Pines.

Great bourbon. Great food. Great people.

Bourbon lovers—this is not an ordinary tasting.

On Thursday, August 13, Cork welcomes Dixon Dedman, the acclaimed master blender who resurrected Kentucky Owl and later founded 2XO Whiskey.

Dixon will personally guide just 24 guests through four featured pours:

🥃 2XO American Oak
🥃 2XO French Oak
🥃 2XO White Oak Rye
🥃 A special limited-edition pour

Along the way, he’ll share the stories, techniques and decisions behind world-class whiskey—from blending and barrel selection to the profound influence of oak.

There will be questions. There will be opinions. And there will be very good bourbon.
