A hidden gem tucked away off Shelburne Rd., the restaurant emphasizes using fresh, local, and in-season ingredients in its upscale-yet-unpretentious dining. At Pauline’s, Chef/Owner David Hoene is known for his use for fresh, organic products and for the outstanding quality of his cuisine. We focus on Contemporary American Cuisine with a French twist, specializing in local and wild foods from the Lake Champlain Region. We are famous for our crab cakes, schnitzel and vegetarian entrees.
