Our brewhouse has found a home. A really good one.

Our new friend Chris at Rites Brewing in New York sent us a message a couple months back to ask about buying the vintage British brewing system (brewhouse in brewer-speak) that was ours for almost seven years at the Ivory Bill. It didn’t take many messages back and forth for us to start really hoping we could make the details work for both of us—this was clearly the right sort of person to delight in open fermenters, British engineering quirks, and manually controlled…everything.

We did in fact come to an understanding, and Chris came with a big truck. Same model yellow Penske box truck we used to bring the system to Siloam from Iowa in 2017. We loaded him up and off he went, back to New York in one very long roadtrip push.

This week Chris brewed his first beers on the system. We’re sending our very best wishes.

We are still beyond sad to have lost the fellowship of the Ivory Bill taproom and the pleasure of making beer for the our friends and neighbors. We miss you. But we’re also so grateful for the good years we had together.

We’re not entirely sure what’s next for us. (Is anyone really?) But we do know we’ll make our way to Long Island before too long to see Chris at Rites Brewing and crush some of his open fermented beers. They’re going to be so good.

We loved hosting this event at the Ivory Bill—such a cool opportunity to talk to young scientists and engineers about their work! It’s back tonight 6-8pm at Olive & Opal, just a block or so west of the old brewery location. If you a curious person or have a student interested in STEM, this would be a very fun last night of summer vacation activity.

We’ve just posted some Ivory Bill things for sale, including glassware, a bunch of kegs, taproom furniture, and a lot of the odds and ends it takes to run a brewery. We also are selling our vintage British brewing system. Commented links to our FB and Pro Brewer links below..

The honest hard reality of closing up a small business like ours is that after almost seven years of being open we’re still paying for the improvements we made to this building, and selling every last thing we can at least helps cover a portion of that debt. So thanks in advance, for making this hole a little less daunting to crawl out of.

We’re looking for a new home for our vintage British brewhouse. Commissioned by brewing pioneer Peter Austin in 1983 for the Orange Brewery in London, this three vessel electric brewhouse with accompanying open fermention vessels would make your brewery part of a long history of great beer. We built our whole taproom space to highlight just how pretty these wood-clad vessels are. And not just pretty—delightful, efficient, productive tools as well. For the right brewer. If you see brewing as primarily executing formulas and button pushing, you won’t like brewing on this brewhouse. If on the other hand you approach brewing as a human-scale relationship with ingredients you care about, with a yeast strain or two that you know intimately, there isn’t a more pleasant brewing partner. I treasure the time I got to be the steward of this system, to spend my days brushing up against the intentionality of every part. If you, or maybe someone you know, is in the planning stages of opening a brewery and you think you might be the right fit, please reach out.

As a historic brewhouse, we feel a responsibility to keep this system together, and are seeking a buyer interested in keeping it intact. While our collection of brite tanks, including vintage Grundy tanks, is sized to accompany the brewhouse, those are not part of this original system and are available for purchase separately.

What a way to end this chapter.

It’s a common thing for good work to be received with indifference. So it is such an extravagant gift you all have given us all through our final month—and especially the wild finish here at the end, to be sent off with so much love. To have this space we’ve poured our lives into bursting at the seams with beautiful human connections. To hear from so many of you what important life changes and connections were made here. We feel so celebrated, so seen, in a way that makes this day-after-the-last day feel hopeful.

We made this very real thing together friends, and even if the Ivory Bill couldn’t be forever, these years of making a welcoming community together will live on. We’ll see you out there, our dear dear friends.
