Up from the cellar this week is our collab with for their 24th anniversary and ‘22 Midnight Still with espresso and tres leches!

Bottleworks XXIV is an imperial stout that was aged for 13 months in an array of Kentucky bourbon barrels. After blending, it was conditioned on macadamia nuts and single-origin vanilla beans from Papua New Guinea.

‘22 Midnight Still is an imperial stout aged in bourbon barrels. This variant of Midnight Still incorporates stock of imperial stout aged in Kentucky bourbon barrels for 12 months and 18 months. This blend was infused with espresso and tres leches.

These bottles are available for on-prem consumption at our Interbay Brewery and Taproom and you can 10% off if you have a challenge coin!

Summer Cocktails have arrived at our Phinney taproom! These specialty warm weather beverages are perfect sippers for sunny patio days. If you are familiar with our wine program, we really take care in selecting purveyors that we truly love. These cocktails make no exception.

Cueva Nueva Vermut (Tarragona, Spain), is a traditional vermouth aged in 100% French oak barrels, using the Solera system for added complexity. The goal of this project was to produce something ultra old-school but with a fresh feel and taste, with high-quality ingredients. We will be offering this vermouth classically, on the rocks or neat with an orange slice.

Our featured cocktails include, The Alchemist: Vermut, orange bitters, topped with Holy Mountain pilsner from the Lukr tower, and Disciple’s Planet: Vermut, Kila Cava Brut (Catalonia, Spain), garnished with castelveltrano olive and orange wheel.

Additionally, we will be pouring Handshake, a Persian Digestif we’ve loved for quite some time. Made by an Iranian-born manager and owner of a bier cafe in Portland, Maine, the digestif blends the spices of Tehran with the alpine flavors from the beautiful state of Maine. It is a dry, versatile amaro with a base of organic neutral wheat spirit, and nearly 30 botanicals including saffron, tea, lemongrass, sumac, hops, spruce tips, and maple syrup. Enjoy this post-meal pour neat or on the rocks in our Phinney taproom.

These drinks pair perfectly with the vibes of the taproom, offering thoughtful connection to tradition, quality, and unique flavor experiences. Salud!

It’s safe to say summer is ALMOST here, and with that, we have a returning crusher to kick it off with.

As Interbay’s Premier Wheat Beer Brewery™️, we’re stoked to present our precious Pilgrimage, a Bavarian-style Hefeweizen inspired by a trip to Klosterbrauerei Andechs, one of Germany’s last remaining monastic breweries. Perched atop the Holy Mountain in Herrsching, Upper Bavaria, Andechs drew us in with their Helles—but we stayed for the Hefe.

Pilgrimage is rich and silky, yet bright and effervescent. Through design and fermentation, we leaned into clove over banana, with a touch of nutmeg-like ester character. Endlessly drinkable and built for sunny patio tables, good friends, and wherever summer finds you.

Currently available in both taprooms on draught and in 4-packs.

We open at Noon today and we brought up some our best from the cellar for the occasion.

2024 HAND OF GLORY - This vintage of Hand of Glory is a barleywine that was aged in 13 year old Kentucky bourbon barrels from Elijah Craig between 16 and 24 months. It was then transferred into 15 year old Tennessee whiskey barrels that were previously used by Widow Jane where it continued to age for an additional 14 months. 😮‍💨

Next up is our 10th anniversary Imperial Stout SIN NANNA -
This imperial stout was aged in Kentucky bourbon barrels for 18 months. Brewed to a higher strength, with more dark malt and a longer boil than Midnight Still, we continue experimenting and pushing the boundaries with these dark and rich beers aged in bourbon barrels.

We made some socks! It was harder than you’d think to have some quality socks made. They needed to be sturdy enough for double brew days in steel toe boots and comfy enough that you don’t mind keeping em on after you switch back to sneakers (or sandals for you absolute animals).

These Made in the USA wool blend socks are all of that and more. They’re made from Montana sourced wool that was then dyed and manufactured in North Carolina. They say Drink Full and Descend on the foot bed. They’re awesome. You can buy them in either taproom or in the online store. Get some.

Today in both taprooms we have a brand new WC Pale called The Dreaming City and one of our very favorite collaborations - Large Marge Upper West Coast IPA with the one and only

THE DREAMING CITY is a West Coast Pale Ale brewed with Pilsner and Wheat malts & firmly hopped with a blend of Mosaic, Mosaic Cryo, Columbus, and Strata. Pale yellow with a beautiful white cap of foam. Aromas are driven by notions of lime zest, mandarinquat, and deep blueberry compote. Dry with a crunchy bitterness and long hop density.

LARGE MARGE is brewed in collaboration with Living Häus Beer Company (Portland, OR). We first brewed an Upper West Coast Pils with Living Häus named Margie Lee after Colin’s grandmother, a vibrant 4’11” force of nature. Due to its popularity, we later transformed it into a full-fledged IPA: Large Marge. Built on a Pilsner malt base, it’s packed with Citra hops for bold citrus and tropical fruit flavors. The can design reflects her love of roses and her ability to grow and adapt to anything, learned from rising from the Dust Bowl of Oklahoma in the 1930s.

Both beers are currently on draught and in 4-packs in both taprooms and will hit the online store for WA State shipping tomorrow.

It’s mighty nice in our beer gardens at the moment - come get a beer, you probably deserve it.

Tickets will be sold at the door.

Up from the cellar this week are two beloved variants - 2022 Midnight Still with peanut butter & cocoa nibs and 2024 Midnight Still with coconut, graham cracker and vanilla.

The 2022 variant of Midnight Still incorporates stock of imperial stout aged in Kentucky bourbon barrels for 12, 16 and 24 months. This blend was infused with peanut butter and cocoa nibs.

The 2024 variant of Midnight Still incorporates stock of imperial stout aged in Kentucky bourbon barrels for 24 and 29 months. The blend was infused with coconut, graham cracker & vanilla.

✨These bottles are available for on-prem consumption at our Interbay brewery & taproom, and you get 10% off if you’re a challenge coin holder.✨

We also still have some of this last weekends 2026 Midnight Still release on draft at Interbay as well, which is tasting damn fine if you haven’t heard already.

Today in both taprooms we have fresh batches of two of our favorite yearly beers - Five of Swords and The Scarlet Thread.

Wow, this is our 11th year brewing Five Of Swords with our close friends, . Originally, this was intended to be the only IPA we made once a year, but oh how the times have changed. This year’s batch is a West Coast IPA brewed with a blend of pilsner, 2-Row, and wheat, and is aggressively hopped with Nectaron, Peacharine, and Cold-Pressed Nelson Sauvin Hop Kief. Bright, punchy, with a hint of green that has us looking forward a few months into those awesome beers of hop harvest.

The Scarlet Thread is our tribute to the světlý výčepní beers of Czechia - an extremely easy drinking pale lager. It was brewed using an extra pale Bohemian Pilsner malt and hopped in the kettle exclusively with Saaz, before being fermented cold with a delicate lager yeast for 6 weeks.

We’ll also have a gravity cask of Scarlet Thread on Saturday in Interbay to give your palate a break from Midnight Still madness.

Both beers are currently available in our taprooms and online store for shipping within WA State. 5oS tees are also available online and at both Interbay and Phinney.

If you order a full case of beer through our online store, we’ll cover the shipping and save you around $40.
