Nama club !!!!!Ninth generation running.. presenting, Kasumi Tsuru’s Shiboritate Yamahai Shiboritate Namachozo! Whoo, what a mouthful. This sake sits at a ~68% polish ratio. This lets a lot of the natural sweet flavors permeate each sip.

So, let’s start off with defining this sake. Shiboritate means it’s a ‘fresh’ sake. Bottled shortly after being pressed, this ensures the flavors of the rice, koji, and brewing methods are true.
Next: Yamahai! This just means that the brewers allow the naturally present microorganism in the air to start the production of the lactic acid in the rice. This allows for more complex and deeper flavors, but requires skill and close monitoring.
Namachozo: This just means the sake DOES go through one single pasteurization, right before bottling. So while still technically a nama, it’s a fun little variant.

Ooookay! So this sake has some strong, complex, and fun flavors. Everything is layered, and it might take a few sips to be able to pick out each subtle element. The umami is ever present in each sip, chased by some gentle tropical flavors. On the backend, there’s gonna be a touch of caramel, or sugarcane sweetness(adding just a touch more funk).
Our snack pairing for this one… Soma’s housemade Tare! Tare is a sauce that is made once, then continually built upon itself for years. For a real, rare Tare it can take 10+ years for it to fully realize. This one is a secret recipe Soma acquired from a friend who owns a secret restaurant in Japan(no you’re not allowed to know!). Some say their Tare is the best there is. Can’t wait for you to try it! Goes great with skewers, in sauces, on any kind of red meats.

Nama club pick up!!!Introducing.. Tohoku Meijo’s Makiri Draft! This Junmai Ginjo sits at a strong 60% polish ratio, offering a crisp, dry, and textured sake.

Makiri Draft, or ‘Extra Dry’, embodies one of the most sought after aspects of modern sake.. being extra, extra dry. This Makiri is pulled straight from the tank, why it’s called draft. It’s a limited seasonal release with limited quantities, and really a great expression of “new brew”. Since it’s drawn straight from the tank pre-pasteurization, pre-dilution, it really presents the best of what sake can offer. Dry, clean, and precise; there is a subtle touch of a grain sweetness that is pulled away from your palate by a sharp, polished, and a refreshing finish.

For our snack pairing… Soma went out to forage devils club for ya! We made a devils club miso and mascarpone snack dip. A strong umami and herbal flavor pairs perfectly with the dry and crisp extra dry sake. Get your veggie sticks and ritz crackers ready for dipping

Alright ya'll.. We're doing Seattle Cocktail Week!

Head over to from Tuesday, 4/21, to Saturday, 4/25, for three specialty cocktails. First cocktail to showcase is right here: While The Sun Shines.

Burnt hay infused Bacardi Silver, Chareau liqueur, Orleans bitters, and a 2:1 demerara syrup. Served up, touch of grapefruit to finish it off.
