Paragon Seattle Located in the bustling neighborhood of Queen Anne for the past 20+ years, Paragon is a lively Pacific Northwest restaurant, bar & music venue.

Elevated cocktail program & vibey live music! Paragon opened in 1995 to an overwhelming response. Our Seattle location is the last of three that is still standing after 24 years of operating experience. After the change of ownership in early 2019 our renovation focused on updating outdated equipment and systems while maintaining Paragon’s original character and tidying up the space. Our major goal

was paying homage to the gorgeous 1929 Queen Anne building and preserving an institution that’s been on top of the hill for the past two and a half decades. Our vibe is updated but classic inspiring a feeling of nostalgia for the dimly lit, smoky bars of days gone by. Don’t worry, we still provide all of the creature comforts and elevated hospitality standards of modern day with menu that celebrates all the bounty of the Pacific Northwest land and sea!

There are two things I’m not tying to do in this post right now but I’m about to do both. The first is brag and the second is make you sad.

I’d like to present to you Chef’s riff on a Paragon original dish: ‘Chicken Pot Pie (But make it Fashion).’ Braised chicken, bacon, roasted vegetables, mushroom à la crème and fried broccolini florets.

Here’s where I get braggy, but hopefully it’s at least a . I have had the absolute pleasure of working with Chef since the very beginning of the pandemic. His creativity, passion and incredible palate is a huge reason we survived the closures, mandates and pandemic related stressors on our industry for the past two years. It’s dishes like this that remind me how lucky I am that he forced me to FaceTime him for his interview over two years ago. I knew the second I hung up that we’d be hiring him. My first call? One of my only remaining partners (he’s not staff- he’s my equal if not more so), Frankie. Because obviously Frankie makes all the decisions (which is the other reason Paragon survived the pandemic).

Now here’s the sad part. We survived the close downs, we survived not receiving the same grants other restaurants in our city did; instead we made it through with creativity and pure grit. And now, we’ve lost our lease. Our landlord elected to replace us with a ‘better tenant.’

As we bow out somewhat gracefully (or perhaps pirouette if you know chef very well), I want to invite you in to try THIS DISH. Because this dish was one that Paragon opened with in 1994, but it’s also the definition of what Paragon became through the pandemic. It’s beautiful, it’s inventive and it’s goddamned delicious.

PIVOTING TO FACE CHALLENGES TO OUR INDUSTRY HEAD ON

We are welcoming a vibrant and talented new chef onto our culinary team! As he settles in and we make changes to our food program to highlight local, seasonal produce and purveyors of fine meats and cheeses you will see lots of changes to our menu. For now, the best way to get to know his style of cooking is to try our weekly Family-style Dinner. Our menu changes weekly and there are great add-ons and pairings that will change with the season.

This weeks menu is live for preorders now (www.toasttab.com/paragonseattle) and available for pick up Wednesday, May 13 - Saturday, May 16 any time between 5 PM-Cl.

Our beverage program will continue to push limits while featuring seasonal produce and locally foraged flowers, berries and herbs. Jimmy makes his syrups, sodas, tinctures and infusions in-house to ensure a unique cocktail experience from beginning to end. We also offer local beer by the growler and bottles of wine for takeout!
