Rare grape, small production, big reward. Meet our limited release 2021 Nebbiolo (Wahluke Slope, WA).

With fewer than 30 acres of Nebbiolo under vine in the entire state of Washington, this is a grape that asks a lot and gives back even more. The 2021 vintage provided us ripe, concentrated fruit with excellent natural structure to work with.

Crafting a 100% Nebbiolo outside its native Piedmont takes steadfast optimism and an exploratory spirit, equal parts patience and gamble. We don’t shy away from that. From the beginning, our focus was on handling the fruit gently and letting the w**e express itself without overworking it.

We spent a lot of time tasting along the way, adjusting as we went to preserve the freshness and aromatics while giving the w**e the structure to develop naturally. We were especially conscious of keeping the tannins in check, letting them soften and integrate rather than pushing them too hard.

As the w**e developed, the classic Nebbiolo profile began to emerge, floral aromatics of rose petal, bright red cherry and orange zest, darker fruit like cranberry, and savory, earthy quality underneath it all. Time in barrel rounded things out into notes of black tea and spice, without ever dominating the fruit.

For us, the 2021 was really about patience and restraint in the cellar. The fruit came in with plenty of personality on its own, so our job was mostly to guide it, stay out of its way, and give the w**e the time it needed to find its balance.

Piano + Vino brought the energy for our latest Pioneer Square First Thursday Art Walk afterhours, and this recent set was proof of what’s possible when we get DJs in the space. Shoutout to Marcel - DJ, Event Curator Tichi and A N Z O for holding it down.

And to everyone who came through after the art walk, thank you. You brought the good vibes, the positive energy, the laughter, the good conversation, the fashion, just people enjoying themselves and each other’s company.

We’re building out regular DJ afterhours at Bacovino, so mark your calendar. Catch us Saturday, August 15th for another DJ set, then August 22nd we’re co-hosting the Pioneer Square W**e Walk with a set to match. More coming soon 🍷🎶

Pioneer Square has always been a home for artisans: galleries, restaurateurs, musicians, w**emakers, creators of every kind. This Saturday, as you taste your way through our inaugural w**e walk, Sips in the Square, Bacovino adds a page to that story.

We’re hosting Bainbridge Island author Mary Lou Sanelli for a book signing of her award-winning collection, “In So Many Words.” Her essays turn a close eye on ordinary moments, the people we share them with, and the places we call home, fitting company for a neighborhood built on paying attention to craft.

W**e walk. Local w**eries. A local author. All in the Square this Saturday.
