Our friend, community-member, longtime chef and local Death Guard enthusiast, Ed has been working on launching his own sandwich business. Last Sunday, after months of designing a menu, acquiring equipment, logo design and more, he finally fired up his little oven outside of Waystone.
The space was filled with the delicious smell of hickory-fired chopped cheese and waldorf salad sandwiches on fluffy sandwich rolls. Unsurprisingly, he sold out of ingredients within *two hours*.
At the end of the day we shared a misty-eyed hug. Launching something like this is risky and terrifying. Beyond the practical and financial challenges, you end up putting so much of yourself into it. It was awesome to see how our community has rallied to share enthusiasm for what Ed's doing--this sort of community support is what keeps us going, too, and ultimately allows rich, local projects to carry on.
His sandwich cart, JJ's is a true smallest of the small, business. If you see him around, grab a sandwich!
