The Buffalo Snapper Wing.

Our in-house butcher, Chef Kris, has been finding creative ways to use more of the fresh, whole, incredible fish coming through our kitchen, including often-overlooked cuts like the collar. IYKYK.

Fresh-caught snapper is trimmed in house, and the collar is quick-brined, breaded, flash fried, and served with buffalo sauce and house-made blue cheese dressing.
