Forty plates off one narrow line. Owner Mavis Frey and Executive Chef Juan de Paiva on the pass together last night for stop three of the Originals Culinary Tour, Siesta Key Edition, while the dining room kept running.

Fifty four guests, twenty five minutes, a trolley that had already eaten twice. The guests saw the plate. This is the part they did not see.
