Representing Santa Fe in New Orleans!

Tonight, La Fonda’s Executive Outlet Chef Marc Quiñones joins the James Beard Foundation’s 2026–2027 TasteTwenty chefs for the kickoff of the Taste America series in New Orleans.

Marc is one of a select group of chefs from across the country chosen to represent their communities and culinary traditions. Tonight, he’ll showcase flavors from the Land of Enchantment with his New Mexico Spiced Beef Tartare, served with Red Chile Salsa Macha and Pink Peppercorn-Pickled Corn on Sourdough Toast.

We’re incredibly proud to have Marc representing La Fonda, Santa Fe and New Mexico on the national stage. Congratulations, Chef! 🌶️

The James Beard Foundation’s Taste America is coming to Santa Fe! Part of a national dining series celebrating standout culinary talent in 20 cities across the country, the evening promises an unforgettable taste of New Mexico.

Join us at La Fonda on the Plaza on Wednesday, November 11 at 6 pm for a four-course dinner with wine pairings created by James Beard Foundation Santa Fe TasteTwenty Chef Marc Quiñones, La Fonda’s Executive Outlet Chef, in collaboration with guest chef Raymond Naranjo, owner of Manko Native American Fusion.

This special evening brings together two talented Santa Fe chefs for a menu inspired by the flavors, ingredients and culinary traditions of the Southwest.
