Labor Day on the Cantina calls for a table covered in everything: Cantina Tempura Shrimp with chamoy sweet-and-sour & jalapeño ranch; Prawns with Griddled Corn Cakes, chipotle butter, salsa fresca & guacamole; Chicken Enchiladas—get them Christmas & add an egg—with black beans, lettuce & sour cream; Mama Schutz’ Frito Pie loaded with red chile beef, beans, tomato, onion, lettuce, cheese & sour cream; and the Green Chile Cheeseburger with your choice of chile-dusted fries or onion rings.

There are Baja Fish Tacos too—tempura mahi mahi topped with pickled root vegetable slaw—alongside the Tickled Pink Paloma with silver tequila, pink grapefruit, lime & salted Pop Rocks, and plenty of Salty Señoritas, Coyote’s signature margarita finished with salted lime foam.
