This dessert started with two things he loves most: chocolate and guava. From there, Chef Dakota built a plate that moves through every note she loves to chase in a dessert - rich and silky chocolate, bright acidity from the guava, a subtle touch of red chile heat, olive oil caramel, and just enough salt and savory depth to keep you coming back for another bite.

June feels like the perfect time for an introduction.

As Santa Fe welcomes visitors from around the world for another summer season, we’re taking a moment to reintroduce ourselves.

Since 1987, Coyote Cafe has helped define modern Southwestern cuisine, earning a place in the hearts of locals and travelers alike.

Today, owner Quinn Stephenson continues that tradition alongside Executive Chef Dakota Weiss and their team—honoring the restaurant’s history while ensuring every guest experiences the very best of Santa Fe dining.

What can you expect when you join us? Thoughtful hospitality, a nationally recognized wine program, seasonal ingredients, creative Southwestern cuisine, and a dining room designed for everything from a celebratory evening to a memorable night out in The City Different.

Looking for something a little more casual? Head upstairs to the Rooftop Cantina, open daily from 11:30 a.m. until close. Enjoy cocktails, Southwestern favorites, and some of the best rooftop views in Santa Fe. The Cantina is walk-ins only, making it an easy stop during a day of exploring downtown.

Today’s the last day to vote for ’s Local Hero Awards, and if you’ve spent time at Coyote Café lately, you already know why Chef Dakota Weiss deserves Best Chef Santa Fe.

Beyond the beautiful plates and incredible flavors, Dakota continues to push Santa Fe dining forward while showing up for the community through organizations like and other charitable work throughout the year. Her creativity, leadership, and heart are felt in every part of the restaurant.
