We’re grateful for the opportunity to work each day with our amazing team to create beer and food experiences for you.

Working to improve all the time is a grind. It requires isolating the largest issue daily. It’s easy to lose sight of where you were or where you’re going while focused on the days process.

It’s nice to take a moment to look around.

Our brewing team is creating world class - award winning beers.

Our kitchen team has moved through four major process iterations in their journey of searing Wagyu on our inch thick steel plancha.

Our beer tenders providing excellent customer service and knowledge.

It’s crazy to think about..we’ve been doing this for 7 years.

We have been working to better our beers, every batch, for SEVEN years.

It’s always been about creating things with a sense of place. Create common fare out of the best ingredients possible, do them honor with technique, and get out of the way.

And then there’s you all. We pay attention to what you want and we strive to give you that. Thank you for supporting us on this journey.

New-ish can release! The Köld IPA

Köld IPA is a cold-fermented Indian Pale Ale brewed with Pilsner Malt and Citra, Nelson and Triumph hops.

ABV: 6.1%
Available in can and on draught.

Trays and half trays are now available at the brewery. Fill a tray with any of our beers and stock your fridge for the weekend.

Water is 90% of what makes a beer. It’s ultimately what makes our beer of this place.

Utilizing water from local reservoirs and potentially the home property, our desal allows us to control the mineral content and pH balance of the water used in our beer.

The character of the water will determine the flavor of the wort, which is the liquid extracted from the mash in the brewing process. The pH of the water also impacts the perceived bitterness of the beer. Any contaminants or chlorine in the water can result in the beer tasting “off.”

It takes a lot of work to dial in specific mineral and pH content of water. Mad scientists of Third Window Brewing.

It’s beautiful and incredible.

The home ranch is 700+ acres and houses many species of plants, oaks and animals.

We have a farm that cultivates various vegetables including a mushroom cave we have recently started to utilize.

There are many chickens that produce eggs.

The waygu cattle are raised here and fed our spent grain and pumice from the brewery.

The 300 year old oaks trees serve shade for the free roaming animals on top of the property. The fallen oaks provide fire for kitchen.

Everything is here. The question is, how do we utilize it all?

Our weekly meetings consist of many topics. One of them this last week was a new beer coming soon to the brewery.

A lambic style beer that’s been in a work in progress for quite some time. R

What makes a beer a lambic?

Kris gave me this - Sourdough is to bread as Lambic is to beer.

It makes sense.

Lambic beer is brewed with spontaneous fermentation. It's a style of Belgian ale that doesn't rely on carefully selected yeast added by the brewer. Instead, the wort is left in open tanks to invite the region's microorganisms into the sugary feast.

Beer, Wine, Food - ranched, farmed, and crafted here. ⁠

The concentration of Santa Barbara born items created and served in our shared courtyard is unlike any other.⁠

⁠All of our beer is unfiltered and created on Haley street in Santa Barbara. Gravity and time is our only filter. This process takes longer, and is more expensive,- but creates higher quality, fuller flavored beers. Our beer is alive and served by the people who make it.

Proximity, friendship, coincidence, and time melt together to create unique things that are "of this place."⁠

The word “Saison” means season in French and speaks to its intimate connection to the seasons. Traditionally, home-brewed farmhouse ale was made in France and Belgium with only a few encompassing characteristics.

The seasonality tied to brewing this style created its few binding characteristics. These beers were meant to be “laid down” until the warm growing season, so they had to be strong enough to whether a storage time of several months, but at the same time not strong enough that farmhands couldn’t continue working after quenching their thirsts.

They were unfiltered, bottle conditioned, and often quite heavily hopped because of these same long storage times.

Being in the wine industry for 40 years, the process of the Saison is appreciated. This beer is probably as close to wine as beer gets.

The enduring beer styles were created from ingredients unique to a place.

Our beer tenders participate in the creation of beer. Working on the labels, talking about the process with brewers, the beer names.. every one of us contributes and adds to the story.

The stories behind the brewers intentions - the direction the beer is headed is an art. It’s an authentic experience.

Ultimately that’s what making craft beer is all about.
