Broke in my new pan this last weekend with a giant batch of paella!
Loaded with all the usual characters -herb and wine marinated chicken thighs, chorizo, and shrimp- and at the base a deeply flavorful sofrito and a bottle of dry white wine.

Never have I ever...liked waffles till these! Before they just seemed like a cheap imitation of pancakes, but these babies are different.
•Texture, tang and slightly salty: a great base for those pockets of syrup. Stack em’ high, watch em’ fly!

•1 cup, flour (whatever’s on hand)
•1 cup +2 tablespoons, rolled oats
•1 tablespoon, baking powder
•1/2 tablespoon, baking soda
•1 teaspoon, salt
•1 teaspoon, vanilla
•1 1/4 cup, Greek yogurt
•1/2 cup, water
•4 tablespoons, melted salted butter
•1, large egg beaten
•*1/2 teaspoon, cinnamon (optional)

Combine all dry ingredients. Stir. Thin out yogurt with water. Add all wet ingredients in center and gently incorporate. Lumpy is good. Set waffle iron to medium and let cook for 5 min till good color is achieved.
Butter. Fruit. Syrup. Eat!

It may not feel like spring, but this salad sure tastes like it!
Tortellini, peas, asparagus, arugula, Parmesan cheese and toasted slivered almonds. Everything is from Trader Joe’s and it’s 1:1 on all ingredients (I even used the frozen peas, frozen grilled asparagus and shredded parm- no fuss!). Simply dressed with olive oil, salt, pepper and the juice of one lemon.
