Come by our new tasting room and enjoy family-made, alive wines from soulful CA vineyards! Meet the J. Brix crew. Our motto, in winemaking and life: ONLY LOVE.

We want to make wine that tells a nonfiction story. From the site to the soil to the growing season, our wines, if we're doing our work correctly, will speak in their own voices. We adore the variety California has to offer, which means we find ourselves compelled to make tiny quantities of as many different wines as we can... and, we try to add a new grape or style each harvest. Our fruit comes f

rom a number of vastly different, soul-stirring vineyards all over the state. We use neutral vessels, native-yeast fermentation, and absolutely nothing else, with the exception of sulfur dioxide as necessary. In keeping with this minimalist approach, we choose not to fine, filter or cold-stabilize our wines.

Join Saltee & Sweet for an intimate, hands-on charcuterie workshop hosted at the J. Brix Wines tasting room in San Marcos. Guests will learn the art of building a beautifully balanced 9” round board while enjoying the atmosphere of one of North County’s most distinctive wineries. Each ticket includes a glass of J. Brix wine or non-alcoholic beverage.

Each guest will create and take home a fully styled board featuring premium cured meats, a curated selection of imported and domestic cheeses, fresh and dried seasonal fruit, house-selected seasonal jam, local honey, artisan mustard, hand-selected nuts, crackers, and fresh sliced baguette.

Throughout the class, Chef Erica will guide guests through pairing principles, composition techniques, texture balance, and visual presentation — teaching you how to create boards that feel elevated, intentional, and event-ready.

About Chef Erica Morales:

Founded in 2020, Saltee & Sweet was created by Chef Erica Morales, a 2012 Le Cordon Bleu graduate with a strong foundation in banquets, large-scale catering, and hospitality operations.

Her culinary career includes experience with casinos, hotels, and local catering companies, giving her a deep understanding of event ex*****on, presentation standards, and flavor development at scale.

Currently working as a Sales Consultant for Chefs Toys, Chef Erica remains closely connected to the culinary community while continuing to offer her charcuterie and catering services throughout the San Marcos area.

Her passion lies in catering celebrations of all sizes — from intimate gatherings to large parties — with beautifully curated graze tables and custom charcuterie experiences designed to bring people together.
