When the rent went up, Phil Duke did not go looking for another building. He went looking for swampland.

Duke had opened Gilhooley's in 1987, in an old ice house in Bacliff. By the middle of the nineties the rent had gotten away from him, so he moved down the road to San Leon on Galveston Bay, picked out a low wet piece of ground that nobody else wanted, and built the new place out of salvaged lumber. It has looked like a fish camp ever since, which is about what it is, and Houston and Galveston families have been driving out to it for decades.

The house rules are hand painted on a sign out front: no kids, no pets. Nobody under eighteen goes through that door, and that is the end of the conversation. No reason has ever been given for it, and out there nobody appears to require one.

What everybody comes for is the oysters, smoked over a pit and finished with garlic butter and Parmesan. Texas Highways reports that Duke worked the recipes out with help from his own mother.

And the man who owns it now used to pull up to the back with the delivery. Misho Ivic came to Texas from Croatia, built one of the top oyster operations in the state, and had been supplying Duke's oysters for years by the time Duke retired in June 2016. The oysterman bought the shack.
