NEW BOTTLE RELEASE…

“Talk not to me of blasphemy, man; I’d strike the sun if it insulted me”

Captain Ahab’s famously defiant line from America’s greatest novel is usually interpreted as the ultimate example of human arrogance. Yet reading it in full context gives it a slightly different meaning; Ahab is searching for the Truth with a capital T, and will not let anything, especially superficial appearances or societal norms, hinder that quest.

There’s probably a connection somewhere between my favorite novel and the name of our meadery. There might be some Ahab inspiration behind our quest to create something unique and singular.

Who really knows. And all of this has nothing to do with our newest mead, Strike The Sun.

Yes, we’re bringing back a favorite from several years ago, with a twist.

This version features Hawaiian Lehua blossom honey from our friends at MoonBow Farms on the Big Island. And we updated the fruit profile a bit, leaning into the tropical notes by featuring mangos and guavas in addition to Muscat grapes and local kumquats.

It’s bright and electric and delicious. It’s the kind of mead you can enjoy as a complex sipper, or in a cocktail or even as a spritz. Throw it on ice with some soda water, we don’t care. Just enjoy it however you want and keep searching for that Truth.

Profile: notes of tropical fruit punch, citrus zest, caramelized mangos and butterscotch. Zippy with a wonderful balance of sweet and acid, and way too easy to drink.

Two new Lehua Blossom session meads on tap today! “This is a Strobbery” 🍓 mead + “Lava Flow” traditional mead.

We’ve always loved Lehua Blossom honey... those delicious notes of butterscotch, guava, caramel and tropical flowers. So recently we brought in over 3,000 lbs of Lehua Blossom honey from our friends at MoonBow Farms on the Big Island of Hawaii to make some fun new session meads for y’all.

NEW BOTTLE RELEASE this Saturday…

Mara is a waterless mead featuring the holy trifecta of Pacific Northwest berries - raspberries, blackberries and blueberries - paired with decadent Southern California Orange Blossom honey.

Sounds simple enough: nothing but fruit and honey, and some yeast to turn it all into booze.

But this is not a simple mead. It’s a wonderfully rich and complex liquid berry dessert in a glass. It is the elements of sweetness, acidity, tannins and alcohol all swirled together in a harmonious balance.

We’ve been on a quest to continually improve our melomel game for years now, and I think this mead showcases how far we’ve come.

Profile: Notes of raspberry jam, fresh pomegranate, jasmine and bramble cocktail in the nose followed by sweet honey and blueberry reduction in the palate. Thick mouthfeel and initial sweetness punctuated by smooth tannins and a bright acidity that never overstays it’s welcome. Overall a wonderfully jammy and delicious berry mead that’s hard to put down.

Our first release of the year is this Saturday! Introducing “Lemon’s Cello: Fatalii Fire”.

A spicy limoncello-inspired mead made with local Orange Blossom honey, Muscat grapes, Sorrento lemons, Myer lemons and Fatalii chile peppers.

How have we never made this Lemon’s Cello mead variant before? It’s just such a damn good pairing. I’ve never had a spicy Limoncello, but I think we’re on to something. Somebody contact the Italians.

As you know we’re big fans of capsicumels (chile peppers meads). The trick with chile peppers isn’t just balancing the sweet and heat; it’s also about pairing the right chiles with the right honey and fruit.

For those of you that remember our Bad Trip mead from last year, you’re familiar with the Fatalii chile pepper. Sourced from our friends at Zorora Ranch right here in Ramona, these peppers are like a habanero but with even more intense citrus profile. Perfect for our famous Lemon’s Cello mead.

The end result is a huge kick of citrus and tropical fruit all the way across the sweet/acid/heat spectrum, from start to finish. It’s a unique and delicious mead, and I hope you all get the chance to try it.

Profile: Aromas of lemon sorbet, tropical fruit, orange zest and that unmistakable habenero-like chile pepper heat. Taste starts sweet with notes of honey, peach and lemon dessert, with a kick of acid and a smooth pepper heat in the finish. The heat is present but not overpowering, blending nicely with the sweetness and acidity of the Lemon’s Cello base mead.

Folks, this one is special.

Introducing “Making Bones: 1,500 Nights”, a date mead fortified with brandy and aged 4+ years in a combination of bourbon and Alesmith Brewing Private Stock barrels.

We’ve been working towards this project ever since we filled out first barrel back in 2018. As a business, it’s hard to leave a mead barrel alone for a year without releasing it, let alone 4+ years. But as our barrel program grew we had the chance to set a few select barrels aside and try to pretend they weren’t there.

You lose a lot of volume when barrel aging for this long. In addition, extended oxidation will give many meads a 2-3 year shelf life in the barrel, after which point they actually start to decline and lose the vibrancy and uniqueness they had.

So the key was to create the right mead for the job. A mead that was not only indestructible (as you’ve heard me describe our fortified Making Bones meads) but one with ingredients that would also benefit from a whole lotta oxidation. Like an intense a date mead, for example.

We also wanted to choose the right barrels. And when we got our hands on an Alesmith “Private Stock” old ale barrel, that just seemed like a perfect fit. If you’ve had the beer you know what I’m talking about.

So here it is, four years later. It’s unbalanced in the best possible ways. This is not a mead for everyone, and honestly, not a mead for just any occasion.

Tasting Notes: This is a sipping mead if there ever was one. Intensely rich and boozy, mouth-coatingly thick, and complex for days. This is a mead you share with your favorite people or sit alone and contemplate solo. And this is a mead you can open and keep going back to for a month or more. It ain’t scared of a little air.

For our 8th Anniversary Party this Saturday we crafted a very special mead cocktail using everyone’s favorite bowl of breakfast nostalgia, Cinnamon Toast Crunch.

The cocktail features our new “Wild Lands” mead, a traditional mead made w/ meadowfoam blossom + wild buckwheat blossom honeys, then aged 17 months in a buffalo Trace bourbon barrel.

Infused w/ Cinnamon Toast Crunch and served over ice with some candy cap bitters... you don’t want to miss this one.
