V***e Fourny et Fils knows time-honored tradition: the family has been producing Champagne since 1856, and now the fifth generation of brothers, Charles-Henry and Emmanuel Fourny, continue that tradition. Their house style is defined by their terroir; the wines show a clean, dry purity with rich aromatics and complex minerality, characteristic of the Côte des Blancs. V***e Fourny grows their grapes primarily in the Premier Cru village of Vertus, which is known for chalky soils and a southeastern exposure, not to mention 60+ year old vines, and they vinify each vineyard parcel individually to express its specific character. This acute attention to detail is what allows Fourny to rise above the rest.

This Extra Brut Blanc de Blancs epitomizes their winemaking philosophy. The wine is bright and focused, mineral-driven with a touch of salinity, yet showcases green apple, lemon zest, and a balancing, creamy texture on the palate. Unfined, ulfiltered, unbothered.

Champagne Jacquart is a stand out for being a modern marvel, combining a terroir-driven approach with extended aging practices to craft wines of incredible complexity and balance. Founded only in 1964, it focuses largely on Chardonnay grapes sourced from over 60 crus across the region, creating a true “mosaic” of terroirs. The house uses unusually high proportions of reserve wine and extended lees ageing (up to 5 years for NV cuvées!) bringing depth and refinement.
With a focus on freshness, finesse, and sustainable vineyard partnerships, Jacquart balances a contemporary attitude with serious craftsmanship and offers polished, mineral-driven Champagnes that rival prestige bottlings at a very approachable price.

Take this 2014 Cuvée Alpha, for example: Jacquart’s prestige bottling that exemplifies the house’s commitment to elegance and depth. 52% Grand Cru Chardonnay / 48% Premier Cru Pinot Noir, seven years sur lie. Expect honey aromas, toast, dried fruit, candied citrus.

Though on paper Krug is a Grande Marque (GM) Champagne, meaning it is a large, established Champagne house that produces wine under its own name and sources grapes from across the region, its values and practices more closely align with those of grower-producer (RM) Champagnes.
Founded in 1843 by Joseph Krug, the house has always pursued the radical idea that every vintage, no matter the year’s challenges, can produce a Champagne of the highest quality. This is seen in their Grande Cuvée line, which is NV Champagne comprised of over 120 wines from 10+ vintages, aged extensively in both barrel and bottle. And it only gets better from there:

2011 Krug - From Premier and Grand Cru plots in the best villages in the region, 46% Pinot Noir / 37% Chardonnay / 17% Pinot Meunier, aged 13 years in the cellar prior to release.

Champagne Paul Bara is a highly respected, family-owned grower-producer based in the Grand Cru village of Bouzy, renowned for its Pinot Noir. What makes Paul Bara so great is 180+ years of tradition, dedication to estate-grown fruit, and old-vine vineyards on prime chalky slopes. Paul Bara is one of the few récoltants-manipulants in Bouzy, choosing to emphasize quality and terroir over volume; over the years many major champagne houses have approached Bara to try to buy the ~30 exceptional locations they control in the village.

Their champagnes are known for richness, elegance, and aging potential, often showcasing a powerful yet refined style true to the Bouzy terroir. Because of the older vines and long ageing, many of the vintage-dated cuvées reward patience and cellaring, but this NV Grand Cru Brut is ready for you right now.

J. Lassalle is a small, family-owned grower Champagne house in Chigny-les-Roses, known for its traditional, artisanal methods and strong sense of terroir. Founded in 1942 and now led by three generations of women, they stand out for practices such as hand-riddling, full malolactic fermentation, and aging their wines well beyond the regional norm.

The house owns all its vineyards in the Montagne de Reims and emphasizes Pinot Meunier, giving its Champagnes a distinctive, mineral-driven style with elegance and depth. Their Brut Rosé is crafted in the elegant “œil de perdrix” style, pale‑salmon in hue, and uses around 70% Pinot Noir (direct‑pressed), with 15% Chardonnay and 15% Pinot Meunier, all from their Premier Cru vineyards.

With International Champagne Day approaching 🥂 we want to take the opportunity to highlight some of the bottles you should be drinking at Sabre:

Forget-Chemin is a fourth-generation grower-producer with about 13 hectares spanning ten Premier and Grand Cru villages. Thierry Forget blends over 60 small vineyard parcels to create champagnes of depth and balance.

The estate practices sustainable viticulture and exports only small quantities, making its champagnes both artisanal and rare. The wines are known for their elegant balance of freshness, complexity, and expressive sense of place.

A member of the prestigious Club Trésors du Champagne (Special Club!) since 1973, Forget-Chemin produces limited-quantity cuvées aged extensively in traditional chalk cellars, enriched with reserve wines dating back to 1991, like this 2018 Rosé. Less than 1500 bottles produced.
