An aerial view of another batch of malt. This 10,000 pounds are destined to be a Munich 10. I bring the grain to a higher moisture in the steep at 46%. This makes more soluable proteins and makes for amino acids for the Millard process. More melanoidins means better beer.

Let's talk terrior. Many of you know the differences of whiskeys from Scotland. Highland to lowlands, islay to speyside, Very different. Some has to due with process but also location of ingredients.
